    I would like to get a recipe for "marron glacees".

    It's been a very long time since I had them at the "Lion d'Or" in
    Buenos Aires.

    I looked up the recipe last night and wrote a few notes.
    
    For 1k raw chestnuts.  Slit skin, cover with cold water and boil
    for 2 minutes.  Remove a few at a time and peel.  Cover peeled
    chestnuts with cold water and simmer gently until tender.
    
    Meanwhile prepare syrup - 1lb sugar (16oz- UK), 1lb glucose, 300ml
    water in saucepan and bring to boil.  Add drained chestnuts, cover
    and leave overnight in a warm place.  Next day uncover, bring to
    the boil and and again leave overnight.  Next day, add 8 drops vanilla
    essence, bring to boil, allow to cool a little, lift out chestnuts
    and drain on a wire rack.
    
    I've not tried this - I think you have to be careful that the nuts
    don't break up too much.
