its kraft cheese wiz in hudson, mass. i saw it in the frig and asked
the bartender to confirm ... and he did.
i have always loved their cheese and crackers and for years tried to
figure out what and why they were so good. i know that they use wheat
wafers, definately not wheat thins and thought that the cheese was a
mixture of cottage and ketsup. believe it or not that is what someone
stated in this file. but seeing with my own eyes was nice; i know the
final truth, i think!
i also assume that this is what they use in the other places too and
think that the reason why it tastes so different from what we have at
our homes is because of the length of time that it sits out in the
bar/dining area.
if anyone knows differently; please state so. thanks.

| As the wife of a 99 Kitchen Manager I can speak with some authority
on this topic. (I also double checked to make sure.) The cheese
served at the 99 is a combination of WISPRIDE (sp) cheddar cheese
spread and fresh blue cheese, which is then whipped to make it a
light spreadable texture.

I have to disagree with you. 99 uese Cheese WHiz on their nachos and
on their baked potato with cheese and broccoli. But the spreadable
cheese that comes with the crackers is definitely not cheese whiz. It
gets too hard when refrigerated and the consistency is much different.
I think it's some kind of spreadable cheddar mixed with bleu cheese.

o.k. you guys are right... it can't be cheese whiz they serve with the
crackers BUT i did see it in there and the bartender did confirm that
they used it AND i was sitting at the bar... SO one can only assume
that i screwed up BECAUSE...
i was at the bar!
now seriously, there has been so many different opinions on this i
would love to find out the 'true' answer. i'm sure all 99's use the
same thing .... maybe we could call and find out... i'll see...

| This is the Kitchen Manager's wife again. The approximate ratio
on the Wispride and fresh blue cheese is 80% cheddar and 20% blue.
This is approximate as it is made in bulk at the Corporate Commissary
and shipped to the restaurants. Remember, it must be whipped. (
and served in little plastic cups at a bar)
As to the Nacho Cheese Controversy, it is without a doubt, Land
o' Lakes Cheddar Cheese Sauce. I'm not sure if this is available
in your local supermarket.
