| 3 eggs 1 cup sugar
2/3 cup pumpkin 1 tsp lemon juice
3/4 cup flour 1 tsp baking powder
2 tsp cinnamon 1 tsp ginger
1/2 tsp nutmeg 1/2 tsp salt
vanilla chopped nuts
Beat eggs for 5 minutes on high speed. Slowly add sugar.
Add pumpkin, lemon juice and flavori to egg mixture.
Combine dry ingredients and add to egg mixture.. Spread
in greased jelly roll pan and top with chopped nuts. Bake
at 375* for 15 minutes. Turn out on cloth sprinkled with
powdered sugar. Trim off edges. Roll--cool--unroll and
spread with filling. Roll and chill.
Filling
1 cup powdered sugar 6 oz cream cheese
4 Tbsp margarine (room temp) 1/2 tsp vanilla or rum flavoring
Cream together well.
