Does anyone have a recipe for a Cranberry Eggnog Cake? I saw a picture of one in a catalog and it looked SO good, but they wanted $29 for it!! It was like a bundt cake, almost a pound-cake like texture from what I could tell. I was thinking about modifying a regular pound-cake recipe and adding cranberries but I'm afraid substituting eggnog for the milk might make it too sweet. Any ideas? Thanks Debbie

I know nothing about cranberry eggnog cake but I'm sure substituting eggnog for milk will not make the cake too sweet. Cranberries are *very* tart. Good luck! | |||||

This isn't a cake, but it sounds similar to the request in .0, so I thought I'd post it here. It's delicious! CRANBERRY EGGNOG BREAD ---------------------- 2 eggs 1 cup sugar 1 cup dairy eggnog (not canned) 1/2 cup margarine or butter, melted 2 tsp. rum extract 1 tsp. vanilla 2 1/4 cups flour 2 tsp. baking powder 1/2 tsp. salt 1/4 tsp. nutmeg 1 1/4 cup cranberries Heat oven to 350 degrees. Grease bottom only of 9 x 5-inch loaf pan. Beat eggs in large bowl. Add sugar, eggnog, margarine, rum extract and vanilla; blend well. Lightly spoon flour into measuring cup; level off. Add flour, baking powder, salt and nutmeg, stirring just until dry ingredients are moistened. Add cranberries. Pour into greased pan. Bake at 350 degrees for 45-50 minutes or until toothpick inserted in center comes out clean. Cool completely. Wrap tightly and store in refrigerator. Note: If desired, recipe can be baked in two 5 3/4 x 3 1/4-inch loaf pans, greased on bottoms only. Bake at 350 degrees for 35-40 minutes. |
