| Here it is.
SHAKER LEMON PIE
Makes one 8" pie
3 small lemons (do not peel)
2 cups sugar
2 11" rounds pie crust dough
4 eggs room temperature
1 tbsp. half and half
Cut unpeeled lemons into paper-thin slices. Discard seeds. Toss
lemons with sugar in nonaluminum bowl. Cover and let stand at least
8 hours or overnight.
Preheat oven 450 F. Line 8" pie plate with one dough round; trim
edges. Beat eggs to blend. Fold into lemon mixture. Pour into
pie crust. Cover with second dough round; crimp edges. Brush top
with half and half. Cut slits to allow steam to escape. Bake 15
minutes. Reduce oven temperature to 350 F. Continue baking until
knife inserted in center comes out clean, about 30 minutes. Cool
completely.

If you don't marinate the lemons long enough you get the bitterness..also
be sure to slice paper thin.
