    I am looking for the measurements for the "honey/mustard"
    dressing that I have seen in all the restaurants for
    salads.  I love the taste and am looking for a good recipe I would
    assume it is just honey and mustard? but how much?

    I've made up a honey mustard sauce on several occasions and it comes
    out quite nice!  I do the following:-
    
    I make up a small quantity of thick white sauce, to equal part white
    sauce I add an equal part of dejon mustard, about 3 tablespoons
    of honey, a teaspoon of vinegar and whiz in the blender.
    
    It tastes better if it cools and the flavours meld.

Buy some arrowroot thickener and use according to directions in a cookbook
to thicken some chicken broth or even plain water....it will thicken, but
not add any color to the sauce.  It will be as clear as the liquid you
start with and the flavor will not be affected.  Now, add honey and
prepared mustard to taste....this will avoid the over-sweetness that would
occur with straight honey.  

I don't remember the proportions liquid to arrowroot, but I do know you
mix up a paste first and then slowly stir in the liquid and heat until
it comes clear.  Cool and season to taste.

    I buy "HoneyPot" mustard.  It's sold in the gourmet sections of most
    supermarkets.  It's a bit spicy, but ooh so good!

    The best mustard sauce I've ever had came from the Hay Day Markets
    in Fairfield County, CT (I went to the one in Fairfield).  I think
    the stuff is called Dave's Mustard Sauce -- wonderful on chicken,
    even better when used as a dip with cheese sticks.
