    I need help on "nutritious" snacks.  At my son's school each parent
    gets a turn to send in a "nutritious" snack for each of their child's
    classmates.  Any ideas would be mostt appreciated.  Made it through
    my first one but now I am at a loss.  Thanks.

    How about the trail mix (GORP) mentioned in one of the previous
    notes.  It isn't lo-cal/no-cal, but it is nutritious (especially
    if you use low-salt peanuts, maybe some carob (vs. chocolate), etc.
    
    And, it's fun to eat ... you never know what the next handful will
    get you!

    I used to be a teacher's aid at a preschool and one of the kids
    favorite snacks was celery filled with peanut butter, popcorn, and
    cheese and crackers.  Sometimes we would combine other small snack
    items like pretzels or peanuts along with the popcorn and they really
    enjoyed that too.  Hope this helps!

    Pineapple/Zucchini Cake
    -----------------------
    
1 1/2 whole wheat pastry flour
3/4 teaspoon baking powder
3/4 teaspoon baking soda
2 eggs
3/4 cup plain yogurt
2/3 cup granulated fructose 
1 teaspoon vanilla extract
1 teaspoon grated orange rind
1/4 lb. grated zucchini
1/3 cup chopped dried apricots
20 oz. unsweetned shreded coconut

Mix dry ingredients in a large bowl. In another bowl Whisk eggs
blend yogurt, fructose, vanilla, orange peel, stirring til disolved. 
Miz in zuchini and apricots, then combine with flour. Stir enough to 
blend. Mix pineapple and coconut together and spread evenly over a 
bottom of a round 10 inch non-stick cake pan. Then pour batter on top.
Bake 350 degree oven 40-45 minutes til toothpick comes out clean. Serves 10

Sugarless Bananna Oatmeal Cookies

3 Medium ripe banannas mashed
1/4 cup safflower oil
1 1/2 cups uncooked rolled oats
1/2 cup whole wheat flour
1/2 cup chopped dates
1/2 cup walnuts
1 teaspoon vanilla

Combine all ingredients. Drop batter onto non-stick cookie sheet.
Bake 350 degree oven for 20-25 minutes. Cool on rack. Makes 2 dozen
cookies. 11 calories each.

    Your Sugarless Banana Oatmeal Cookies sound delicious and definitely
    qualify as nutritious snacks for kids but 11 calories apiece?  NO
    WAY!  I did the calculations as below:
    
    3 medium bananas (100 cal each)    =  300 cal
    1/4 c. safflower oil (120 cal/Tbsp)=  480 cal
    1 1/2 c. oats (130 cal/c. cooked)  =  195 cal*
    1/2 c. wh. wheat flour (400 cal/c.)=  200 cal
    1/2 c. ch. dates (490 cal/c.)      =  245 cal
    1/2 c. walnuts (780 cal/c.)        =  390 cal
    1 teaspoon vanilla                 =  negligible if any
                             Total     =  1810 cal for entire recipe*
    
    Dividing 1810 cal by 2 dozen cookies results in approximately
    75 cal/cookie.  Not bad, and certainly nutritious but Mom and Dad
    might want to avoid eating them by the handful if watching their
    weight!
    
    *Note:  I was unable to find the calorie count for uncooked oats
    - the total calories would actually be a little higher than this.

    HI,
    
    
    I was notified that I made a typo on reply .4 so here is the
    correction:
    
    On the cake it should be:
    
    20 oz pineapple packed in it's own juice
    1 cup shredded coconut
    
    
    As far as the cookies go, I did not create this recipe, only saw it
    in a mazagine years ago, and copied it down. I don't remember the 
    name of the magazine. As far as healthy goes, and the caculations for
    where they got 11 calories per cookie, it appears to me maybe there
    was a typo in the copy. I really don't know, but I hope you enjoy it
    anyway.

    side of the Quaker oats container.

    This is a good crunchy munchy.
    
    Mix together:
    popped popcorn (preferably hot air popped)
    1 bag cheddar goldfish
    unsalted pretzels
    unsalted peanuts
    2 different CHEX cereals
    
    There is enough salt in the goldfish to salt up the whole mix.
    You could always put a scoopful (1 - 1 1/2 cups) in a sandwich bag
    and zip it or twist it with a pretty ribbon for each child.

    Fruit treats might include:
    
    Orange slices or wedges
    Apple slices spread with peanut butter
    Fruit kabobs - canned and/or fresh served on toothpicks or
      alternated with cheese cubes
    Dried apricots (2 bags)
               
    Some other nutritious snacks might be:
    
    Raisins (bagged or boxed)
    Popcorn in a bag
    Pretzels
    Yogurt
    Granola bars
    Oatmeal cookies
    Fig Newtons
    Graham crackers
    Sunflower seeds

    I just made this for my daughter's first birthday party.
    Although, I found it did not rise as much as I expected, it
    ended up to be more like squares, I still find they taste very
    good and do not have any refined sugars.

Carrot Squares

This recipe is from "What to Expect in the First Year" By Arlene Eisenberg
and Heidi E. Murkoff, in the "Best Odds" Diet section. I have edited the
procedure after having made this recipe the first time - Monica Barney

  -2� cups thinly sliced carrots <I shredded them in the food processor>
  -2� cups apple juice concentrate <thaw out the frozen type, without dilution>
  -1� cups raisins
  -3/4 cup unsweetened apple sauce

1/ Combine carrots, raisins and 1 cup + 2 Tbsp apple concentrate in a pot, bring
   to a boil, then simmer until carrots are tender.

2/ Pur�e in a blender with apple sauce and let mixture cool.

3/ Preheat oven to 350F.

4/ Line 2 9-inch square cake pans with waxed paper and spray paper with 
   vegetable cooking spray.

  -2 cups whole wheat flour
  -� cup wheat germ
  -2 Tbsp baking powder
  -1 Tbsp ground cinnamon

5/ Combine above 4 ingredients in large mixing bowl.

  -� cup vegetable oil
  -2 whole eggs
  -4 egg whites
  -1 Tbsp vanilla extract

6/ Add next 4 ingredients and REMAINING apple concentrate.

7/ Fold in carrot/applesauce pur�e. Pour into prepared pans.

8/ Bake until knife inserted in centre comes out clean, 35 to 40 minutes.

9/ Cool briefly in pans, then turn out onto wire racks to cool completely.

  -� cup apple juice concentrate
  -1 pound light cream cheese
  -2 tsp vanilla extract
  -� cup raisins
  -1� tsp unflavoured gelatin powder

10/ Put 2 Tbsp of the juice concentrate in a small pot.

11/ Put remaining juice in a bowl, add raisins and microwave 1:30 minutes.

12/ Put raisins and juice in a blender, add creamcheese and blend until
    smooth (you may have to remove the mixture from blender and mix it
    by hand if the blender is not strong enough to handle the cheese.>
    Add vanilla.

13/ Put gelatin powder into small pot that has the juice in it, and let
    it sit for a minute, then carefully let boil and stir until gelatin
    has dissolved completely.

14/ Add gelatin mixture to cheese mixture, stir until well mixed and 
    refridgerate for one hour.

15/ Frost cake with mixture
