I did a dir/tit="venison" and couldn't find the information I was 
looking for, so I hope someone can help me.  Does anyone have 
information on caloric/fat contents for venison?  If you have the 
information in a table so that it shows the difference between 
venison, beef, pork, and chicken that would be fantastic.

The reason that I ask is that I was cooking some over the weekend and 
just got to wondering...  BTW, I cooked some fantastic BBQ that I'll 
be entering into the note on venison recipes (as soon as I find it 
again).

I'm glad you asked that.....a recent article in the food section of the
local paper said that even "farm-raised" New Zealand Venison is a low
fat (and low cholesterol by definition) meat roughly equivalent to
turkey, white and dark mixed 50-50.  Another words, a chart set up to
prioritize meats fat-wise would look something like this:

	LOW FAT:	WHITE MEAT TURKEY, CHICKEN
>>> ADD VENISON HERE	WHITE AND DARK MEAT (50 - 50) TURKEY OR CHICKEN
			LEAN BEEF, VEAL
			DARK MEAT CHICKEN
			DARK MEAT TURKEY
			LEAN PORK TENDERLOIN
			PRIME CUTS BEEF (PORTERHOUSE OR OTHER PRIME CUTS)
	HIGH FAT:	HAM, OTHER HIGH FAT MEATS

Yes, The leanest cuts of beef are leaner than dark meat bird - that meat
is really quite fatty in birds these days - the birds are genetically
prone to fat and very limited in their exercise - so you get fatty meat.
The exception is "Rocky the range chicken".
