    I was recently given some frozen swordfish.  They are in about 1
    to 2lbs chunks.   Does anyone out there have a recipe(s) for 
    swordfish.   We tried broiling some with a butter and garlic sauce,but
    it came out more fishy tasting then I have ever had at a resturant.
    Any suggestions would be greatly appreciated.

    Try the following:
     - in a large bowl mix extra virgin olive oil, a bit of lemmon juice,
       a good amount of dijon mustard(or your favorite type).  Mix very
       well.
     - add diced garlic, basil, oregano, terrogon(sp?), and two or three
       bay leaves.  
     - If you prefer things a little sweeter add some white rice wine
       vinegar.
     - Mix everything very well again!
    Place the fish in the marinade making sure to completely coat the fish.
    Let the fish soak for at the very least 3 hours, preferably overnight.
    I have two suggestions for cooking this after it has soaked:
     1.  Broil it while making sure to repeatedly baste with the marinade.
     2.  Take a large piece of aluminum foil(enough to wrap around the
         fish) and place the fish on top of it.  Cover the fish with bite-
         size pieces of your favorite vegies.  Sprinkle some grated cheese
         and more marinade over the top, and fold the foil into a large
         pocket with the seam on top.  Bake at 415-430 until flakey(that
         will depend on the quality of the fish and how long it has been 
         frozen.
    
    Sorry I don't have any measurements but I do everything by sight or  
    taste.
