Lower calorie, much lower in fat than you expect....and you can still
have chocolate!  I use the buttermilk chocolate sauce over a slice of
angel food cake and fresh peaches...it would also be nice over a
meringue cup filled with fruit.


			BUTTERMILK CHOCOLATE SAUCE

	INGREDIENTS:

	1/3 cup Dutch process cocoa
	1/4 cup firmly packed brown sugar
	1/2 cup non-fat buttermilk
	2 Teaspoons Grand Marnier or other
	  orange flavor liqueur

	INSTRUCTIONS:

	Combine cocoa and sugar in a small sauce pan.  Gradually
	add buttermilk, stirring well.  Place over medium heat
	and cook until sugar dissolves.  Stir in liqueur; remove
	from heat. Yield is 3/4 cup (32 calories/Tablespoon).
	0.7 grams fat/serving size of 2 Tablespoons.


			CREAMY CHOCOLATE DIP

	INGREDIENTS:

	8 oz. package of Neufchatel
	   cheese, softened

	1/2 cup powdered sugar
	3 Tablespoons Dutch process cocoa
	1/2 cup plain low-fat yogurt
	2 Tablespoons skim milk
	1 Teaspoon vanilla extract

	INSTRUCTIONS:

	Beat cheese at medium speed of an electric mixer.  Add
	remaining ingredients, mixing well.  Cover and chill.
	Serve dip with assorted fresh fruit and/or angel food
	cake cubes.  Yield is 2 cups (30 calories/Tablespoon).
	1.8 grams fat/serving of 2 Tablespoons.
