| 1853.1 | some quick peas with pasta ideas | IOWAIT::WILDE | Ask yourself..am I a happy cow? | Wed Jun 28 1989 13:51 | 7 |
Toss cold, uncooked peas with pasta, spanish onion, black olives, and your
favorite italian dressing or vinegarette - voilla! pasta salad.
Toss fresh peas with hot pasta and alfredo sauce - get stuff!

Here's a quick recipe I got from my Italian Mother-in-Law... I love
it.
~Peas with Pasta~
In sauce pan, cook onions in about 1/4 cup olive oil. After onions are
transparent (do not carmelize), add Frozen or Fresh Peas.
At this point I ad lots of black pepper (it gives it some zip).
Meanwhile, your maccaroni should be cooking (I use chili-mac). Reserve
about a cup of the water from the maccaroni and drain the maccaroni.
Add reserved water to sauce pan (about 1/2 cup), and bring pea mixture
to boil.
Toss pea mixture over pasta, and (optional) add remaining amount of
reserved water (If you want it to be soupy)
Amounts vary depending on how many people you are serving.
For 1lb maccaroni (chili-mac)
1 Large and 1 small onion, diced small
1/4 cup olive oil
Pepper to taste
1 cup reserved water from maccaroni (use however much you like).
I know this sound very plain, but it tastes great and is really easy to
make. I enjoy this in the cold months especially!!

| 1853.3 | Use up that leftover ham. | GIAMEM::CASWELL | Mon Nov 22 1993 10:50 | 9 | |
Add cubed ham and garlic to the onions before the peas. Then
put this over the pasta and sprinkle a little parmesean cheese
over that. Got this that nice Italian lady on "Chaio Italia" on
PBS.
