1769.0. "BREAD: Canadian Brown Bread" by PNO::HEISER (B#, not Bb, you'll B(natural)) Thu May 18 1989 19:11

Another bread that I couldn't find in here. This is my grandmother's
recipe, who is from Canada. This recipe will make 2-3 loaves and
previous experience in bread making is a plus (i.e. white bread).

    Ingredients:

    1 cup Oatmeal
    1 cups molasses
    1 tbsp. salt
    1 tbsp. shortening
    2 cups hot water
    1 yeast cake
    5 lbs. white flour

    - Mix oatmeal, molasses, shortening, salt in with 2 cups of hot
water. Let cool to room temperature so that it doesn't kill the
    yeast.

    - Add yeast and cup of lukewarm water to activate yeast (might
give a different measurement on yeast package, use that instead).

    - Add flour as necessary and knead dough as you would with regular
bread. 15-20 minutes should do it. Knead with some shortening
    in between your fingers.

    - Let it rise in a large bowl (cover with towel) until it rises
above the rim of the bowl. It'll be ready when you poke a finger
into the dough and the dough doesn't flow back into the hole.

    - Punch it down (like normal bread), cover with a towel, let it
    rise again.

    - Put on bread board again, knead the dough some more (with shortening
    on fingers as before).

    - Divide the dough into the number of laves wanted, usually 2 or
    3. Put the loaves in greased pans. Cover with dish towel and let
    rise again.

    - Bake at 350F for 45 minutes to 1 hour.
