You Pumpkin lovers will appreciate this one. It is similar to a jelly roll. Roll Ingredients: 3 large eggs 1 cup sugar 2/3 cup of pumpkin pie filling (squash may be used as a substitute) 1 tsp. lemon juice 3/4 cup of flour 1 tsp. baking powder 1 tsp. ginger 2 tsp. cinnamon � tsp. salt � tsp. nutmeg - Beat eggs at high speed for 5 minutes. Then add the rest and mix. - Grease 15"x10"x1" cookie sheet. Cover with wax paper. Grease wax paper. Pour in the batter. Bake at 350�F for 10-12 minutes. - Sprinkle dish towel with confectionary sugar. Let pumpkin bread fall from cookie sheet onto the towel. Peel off wax paper. Roll bread in towel, leave for 8-10 minutes. Cream Cheese Filling Ingredients: 1 cup confectionary sugar 6 oz. cream cheese 4 tablespoons of butter � tsp. vanilla - Whip until creamy. - When roll is cool, unroll and spread cream cheese filling inside. Roll it back up. Wrap it in aluminum foil and refrigerate. If you can't wait, it can be also placed in the freezer. Eat it cold for best results. May also be frozen for later use. Mike

I have been making this very same recipe for a few years now, and I agree it is great. The one difference I have in my recipe though is, after I sprinkle the confectioners sugar on the towel, I also coat the towel with a layer of chopped walnuts, and then I put the cake on the towel and roll. |
