Just in case you don't find anything you want to cook here's
    a favorite of mine.

    Bean Soup
    ---------
    Ingredients

1 1/2 cups dried beans. Great Northern White preferred but any
variety is fine and mixing of different varieties is also good.

    6 cups water
    2 carrots, diced
    2 stalks celery, chopped
    1 medium onion, chopped
1 14 1/2 oz can whole tomatoes (no salt preferred)
    several cloves fresh garlic, crushed
    1 tbsp ketchup
    1 tbsp bbq sauce
    1 jalapeno pepper, diced (optional)
1 tsp grated lemon rind (optional)
    Salt and pepper to taste

    Directions

Rinse and sort beans. Add to the 6 cups of water and soak overnight. If
in a rush, place the beans and water in a large pot and bring to a
boil. Let boil 2-3 min. Cover and remove from heat and allow to sit
    for one hour.

Add all remaining ingredients and bring to boil once again. Turn to
simmer and allow to cook for about 1 hour or until beans and vegetables
are tender. Add water if desired. Pasta may also be added if some added
    carbohydrates are to your liking.

This soup is no fat, no cholesterol, low sodium (with no salt added
tomatoes and a light hand on the salt shaker) and is great with some
good crusty bread and a glass of wine. It's also flexible as you can
pretty much play with the recipe any way you wish and still come out
    with something good.

1726.8non-fat yogurt has potential!HELIX::MCGRAYFri May 31 1991 11:507

Really quick and easy, and very low fat...
Last night I mixed Columbo NON-fat yogurt (vanilla flavored for
some sweetness) with Grey Poupon Country style dijon mustard
and squeezed a little lemon juice in. Stirred it up, poured
it over boneless chicken breast and baked it for 25 minutes.
Yummy! and practically no fat at all!
