    Does anyone have a recipe for honey roasted nuts, specifically pecans?
    
    Sorry, if this is a repeat, but I got logged off twice waiting for

    Hi Linda:
    Here's the recipe from my sister.  Neither she nor I have tried these,
    but what can be bad?
    
    Sugar and Honey Pecans
    
    l l/2 cups sugar     l/4 tsp. salt
    l/4 cup honey        l/2 tsp vanilla extract
    3 cups pecan halves
    
    l.  Combine sugar, salt, honey and l/2 cup water in medium saucepan. 
    Cook, over medium heat, stirring constantly, until sugar is dissolved.
    
    2.  Continue cooking, without stirring, to 244F on a candy thermometer
    or until a little in cold water forms a firm ball.
    
    3.  Remove from heat.  Add vanilla and pecans; stir gently until
    mixture becomes creamy.
    
    4.  Turn onto waxed paper; with fork, separate pecans.  Let dry.
    
    Let me know if you make them.

 I extracted the recipe for my wife,she love it but wanted to send a reply

 recipe for sugar & honey pecans is very good but very rich so be warned.
 Better to drop by spoonfuls into mounds as the mixture hardens much too
 fast to separate with a fork.Also could try adding more nuts for a thinner 
 coating.I would suggest using a large saucepan instead of medium-size as
 the mixture boils up very high in the pan.

    This is taken from a brochure I received from:

    This was the only coating recipe it contained, although I know they
    do have other coatings, this brochure did not have them.  If you
    want just write or call to receive their brochure - it may now contain
    some of the other coatings.  They also do mail order and they have
    some of the sweetest pecans I've ever tasted.  I lived there for
    three years and made frequent trips to their store.
    
    
                          Norwegian Pecans
    
    Heat oven to 325 degrees.  Spread 1 pound pecans and 2 teaspoons
    melted butter in a shallow baking pan.  Bake, stirring frequently
    for 15 minutes, or until pecans are slightly brown.  Cool.  Melt
    1/4 cup butter in shallow roasting pan or jelly roll pan in 325
    degree oven.  Beat 2 egg whites until they form moist peaks.  Sift
    together 1 cup sugar, 1/4 teaspoon cinnamon and fold into beaten
    egg whites.  Stir in pecans.  Spread mixture over melted butter.
    Bake at 325 degrees for 30 minutes.  Add no salt.
    
    Hope this is what you are looking for.  I haven't personally made
    this but I have tasted the ones the store made and they are delicious.

    ORANGE & CINNAMON SPICED NUTS
    -----------------------------
    
    2 cups whole blanched almonds
    1 1/2 cups pecan halves
    1 1/2 cups filberts
    1 cup sugar
    1/4 tsp. cinnamon
    1/4 tsp. nutmeg
    1/8 tsp. salt
    2 egg whites
    1 TBS grated orange peel
    1/2 cup butter or margarine
    
    Heat oven to 325 degrees.  Spread nuts in 15x10x1" jelly roll pan.
    Bake, stirring occasionally, for 20-25 minutes or until lightly
    toasted.  In small bowl, stir together sugar, cinnamon, nutmeg and
    salt.  In small mixer bowl beat egg whites at high speed, scraping
    bowl often, until soft peaks form (1-2 minutes).  Continue beating,
    gradually adding sugar mixture, until stiff peaks form (1-2 minutes).
    By hand, fold in nuts and orange peel.  In same jelly roll pan melt
    butter in oven (4-6 minutes).  Spread nut mixture over butter. 
    Bake, stirring every 10 minutes, for 25-30 minutes or until nuts
    are brown and no butter remains.  Cool completely.  Store in airtight
    container.  Makes 6 cups.

      2 cups raw, unseasoned nuts (almonds, cashews, peanuts, pecan halves)
      3 tablespoons butter
      1 teaspoon chili powder
    1/4 teaspoon ground cumin
    1/4 teaspoon paprika
    1/4 teaspoon salt
    Dash cayenne pepper
    
    Preheat oven to 350.  Spread nuts in pan.  Bake 6 minutes.  Melt
    butter in skilled; stir in remaining ingredients.  Add heated nuts,
    and toss to coat completely.  Return to pan, and bake 5 minutes longer.
    Serve warm.
