    Norwegian coffe cake.

    1c milk
    1 cake compressed yeast
    1Tsp sugar
    1/3c shortening
    1/2c sugar
    3c sifted enriched flour
    1/2tsp salt
    1/4tsp mace
    3Tsp chopped citron
    1/2c seedless raisins
    1 egg
    1/2c chopped nuts
    1Tsp sugar

Scald milk in top of double boiler. Remove 1/2c of this milk, cool to
lukewarm and to it add crumbled yeast cake and 1Tsp sugar.
Meanwhile melt shortening and 1/2c sugar in remaining hot milk.
Pour into a bowl large enough for mixing and cool to lukewarm. Add
half the flour gradually, beating until smooth, then add remaining
flour, salt and mace. Mix thoroughly.
Place in a well greased bowl, cover and let rise until light and
double in bulk (several hours or overnight). Turn out onto a lightly
floured board and knead the raisins and citron into the dough.
Form into a long roll, about 18 inches long. Join ends firmly by
twisting them together, then form dough into a figure eight.
Place into a well greased 2qut heat resistant glass utility dish
and let rise one hour in warm place. Beat egg, combine with nuts and
spread over top of dough. Sprinkle lightly with sugar. Bake in 350 F
oven about 40 min.. Makes 1 kringle

1633.1Norwegian Christmas menuENABLE::glantzMike @TAY 227-4299 TP Eng LittletonMon Nov 01 1993 13:205
Can anyone tell me what some traditional Norwegian Christmas foods are,
or what a typical Christmas dinner might consist of? (I don't need
recipes, yet, just some ideas).

Thanks for any help!
