Didja ever go fishin' through the ice and catch a "mess" of small
yellow perch? You know the ones I mean about 6" to 7" long....so
small that when you fry 'em up there's nothin' left but the batter?
They're good, mind you, especially from a cold water lake like my
home area of Lake George, N.Y. NOW...*IF* we ever get any winter
weather to make the lakes safe to fish on....get a tug of sumthin'
warm like Yukon Jack, bore a hole, and catch some perch. The little
ones you just fillet right there and put the fillets in a plastic
bag. When you get home take a pan of *heavily* salted water and
start it boiling. Roll up these little fillets idividually and put
a toothpick through them and fill up your collander or vegetable
steamer. Steam for about 5 minutes (DON'T let them overcook and
fall apart!) I usually time them by fixin' a martini. Remove from
the steam and immediately immerse in ice water. Arrange on a platter
with celery etc. on crushed ice with cocktail sauce in the center.
Eat just like shrimp.....'cause it tastes the same!
Makes those C O L D tootsies worthwhile.
