8 quail 8 sprigs fresh thyme
8 slices bacon 1 cup chopped onions
4 ounces mushrooms, sliced 1 1/2 pounds red cabbage, sliced
4 ounces dry white wine thin
1. Rinse quail in cold water, pat dry. Stuff each with a small
sprig of thyme. Put quail in baking pan, cover each with 1/2
slice of bacon. Roast in 350-degree oven 45 minutes or until
leg joint moves freely. Discard bacon.
2. In large skillet, cook the remaining bacon until crisp. Drain
bacon, set it aside and crumble. To bacon drippings in pan,
add onions, mushrooms and red cabbage. Stir-fry 2 minutes.
Add wine, stir-fry until cabbage is tender.
Makes 2 to 3 servings.
