| I don't have any Finnish recipes myself, but I have an alternate
suggestion. I was reading the Jessica's Biscuit cookbook mailorder
catalog and they sell a cookbook called, "Classic Scandinavian
Cooking", which features more than 200 easy-to-prepare recipes from
Sweden, Norway, Denmark, FINLAND and Iceland. They advertise it as
being "back in print", "revised and updated", and "rich with local
history, anecdotes and folklore."
If you don't find any recipes through this file, you might want
to pick up a copy!

| Finnish Beet Steaks
1 (1 lb.) can sliced beets, drained
1 egg, lightly beaten
1/2 C fine dry bread crumbs
1 T butter (though most Finns I know use margarine)
1 T lemon juice
1 T chopped parsley
Dip beets in beaten egg. Sprinkle half of bread crumbs on paper
towels; place beet slices on crumbs and sprinkle with remaining
crumbs. Melt butter in skillet. Sute beet slices, turning to brown
each side. Place on platter, sprinkle with lemonjuice and parsley.

| Finnish Stewed Potatoes
6 med potatoes, sliced or diced
2C light cream
1 t salt
1/2 t white pepper
1 T finely-chopped chives
Place potatoes in a heavy saucepan; add 1 1/2 C cream; bring to
a boil; reduce heat and simmer oever very low heat. Gradually add
remaining cream, (just enough to be absorbed by time the potatoes
are tender.) Season with salt and pepper. Sprinkle with chopped
chives.

| Finnish Creamed Carrots
2 T butter
3 T flour
1 T sugar
Dash ground perrep
1 C milk
1/2 C half and half
1 (1 lb) can sliced carrots, drained
Chopped parsley
Melt butter; add flour, sugar and pepper. Stir until well-blended.
Remove from heat, slowly add amilk and half and half; return to
heat. Simmer, stirring constantly, until thickened. Add drained
carrots; heat. Garnish with chopped parsley.

| Finnish Lamb Stew
3 lb boneless lamb, cubed
6 potatoes, sliced
4 carrots, 1" pieces
2 leeks, 1/2" pieces
1 med onion, sliced
1 C shredded cabbage
1 t salt
1/4 t black pepper
3 C water
1 T chopped parsley
Place alternte layers of meat and vegetables in large dutch oven.
Sprinkle each layer with salt and pepper. Add water, bring to
a boil, reduce heat. Cover. Simmer 1 1/2 hours or ntil meat is
tender. Sprinkle with parsley before serving.

| Finnish Summer Soup
2 1/2 C water
1 T sugar
2 1/2 C milk
1 (10 oz) pkg frozen peas
1 med carrot, diced
5 sm potatoes, peeled and quartered
1 egg yolk
2 T butter
1 T chopped chervil or parsley
Salt to taste
1/2 head of cauliflower, cut into flowerets
In a large saucepan, bring water and sugar to a boil. Add the milk,
peas, cauliflower, carrot and potatoes; simmer 10-15 min or until
vegetables are tender. Stir 2-3 T of hot soup into beaten egg yolk,
then return to soup. Stir in butter and chervil or parsley. Add
salt last or soup will become lumpy. Serve immediately

| Finnish Pea Soup
3/4 lb green split peas
8 C water
1 ham hock or bone
1 carrot, chopped
1 med onion, chopped
2 t salt
1/2-1 t pepper
Soak peas in water about 12 hours. In a large pan, bring peas to
boil in same water; skim. Add meat, carrot, and onion; simmer about
2 hours or until peas are tender. Remove ham bone; return any pieces
of ham to soup. Add salt and pepper.

| Cold Fruit Soup
1/2 lb prunes
1/2 lb apricots and pears
3 fresh or dried apples
1/2 C sugar
1 1/2 qt water
1 cinnamon bark
1-2 T potato starch
Wash the dried fruit in warm water and let soak overnight, in water
with sugar added. Boil all the fruit with fresh or dried apples
in this same water with cinnamon bark added. Strain the fruit.
Thicken the juice with potato starch which has previously beenm
mixed with a bit of cold water. Boil agaiin for a few minutes and
add fruit. Serve cold.

| Stuffed Cabage
8 lge cabbage leaves
1 lb ground beef
1/2 C cooked rice
1/4 C chopped onion
1 egg
3 T milk
salt and pepper to taste
3 T butter
Wilt cabbage leaves by pouring boiling water over them. Drain and
pat dry in paper towels. Cut leaves in half lengthwise. Cut out
heavy rib. Mix together, beef, rice, onion, egg, milk, salt and
pepper. Spoon 2 T mixture into each half. Roll and fasten with
toothpicks. Melt butter in heavy skillet and brown cabbage rolls
on all sides, lay in casserole, cover nd bake in moderateoven 350
for 40-45 minutes. Serve in their own broth. Serves 4.

| Finnish Meatballs
2 T butter for frying
1 C cream
3/4 C soft bread crumbs
1 lb lean ground beef
1/2 lb ground lean pork
6 T finely chopped onion
1 egg beaten
2 t sugar
1 t salt
1/2 t nutmeg
1/2 t allspice
Soak breadcrumbs in cream. Mix together beef, pork, onions and
breadcrums, cream mixture. Add beaten egg, salt sugar, nutmeg,
and allspice -- combine well. Shape into balls tiny if to be served
as an appetizer or on the voileipapayta, or walnut size for a family
meal.
Melt butter in frying pan - add meatballs few at a time -- shake
pan to roll the meatballs so that they brown on all sides. When
thoroughly cooked remove meatballs to warm serving dish - keep warm
while making gravy.
For gravy - add to drippings
1 t sugar
3 T flour
1/2 t pepper
1/4 t salt
Heat mixture stirring with fork until mixture is brown and smooth.
Remove from heat - add gradulaly, stirring in 1 C water and 1 c
cream mixed.
Cook rapidly, stirring constantly, until mixture thickens. Do not
boil. Cook 1-2 minutes longer. Add water is mixture gets too thick.
Return meatballs to gravy, cover, simmer on low for 5 minutes.
Serve hot. Yields 4-6 servings.

| Finnish Rabbit Fricassee
6 slices bacon, diced
1 (2 1/2 lb) pkg frozen rabbit, thawed
2 chicken bouillon cubes
1 c hot water
2 T flour
1/2 t salt
1 C heavy cream
1 T red currant jelly
In large skillet, fry bacon until crispy; remove. Drain off fat;
return 1/4 C fat to skillet. Brown rabbit on both sides. Dissolve
bouillon cubes in water; pour over rabbit. Cover. Cook over medium
heat until rabbit is tender, about 45 minutes. Remove rabbit; keep
warm. Stir flour and salt into cream. Gradually stir cream into
pan liquid. Cook stirring constantly, until thickened. Stir in
jelly unti melted. Add bacon. Pour gravy over rabit.

| Pigs in a Blanket
1 head cabbage
1 lb hamburg
1 onion chopped
1 egg
1 C brad crumbs, rolled oats, or cornflakes
1/2 c milk
salt
Cut the core out of the cabbage and parboil for 3-4 minutes. Let
cabbage cool.
In a bowl, mix together hamburg, onion, egg, crumbs. milk and salt
to flavor. Place 1 T of filling on cabbage leaf. Wrap leaf around
filling and place in greased pan. Bake in 350 oven until done.

| Herring Salad
pickled herring
1 1/2 c cooked diced beets
1 c cooked diced carrots
1 c boiled diced potatoes

1 C sour apples
2 c hard boiled eggs
white pepper
Dressing:
3/4 c heavy cream
1 1/2 T sugar
2 T vinegar
1 t mustard
1 1/2 t salt
Mix alltogether.

| Pickled Salt Herring
2 large salt herring (freshen in water)
1 C vinegar
4 T water
1/2 C sugar
2 onions sliced
12 white peppercorns crushed
12 whole allspice crushed
Put vinegar, sugar and spices to heat slightly. Whencoled pouyr
over herring, onions and mix. Store in refrigerator or cool place.
Put up in jars if you want. Keeps good.

Nobody that I know has a "recipe" for Blueberry Soup. But, here's
how we make it. Throw your blueberries in a pot. Blueberries can
e either fresh or frozen, though fresh always tastes better. Cover
the blueberries with water -- just enough water so that you can
begin to see the water under the blueberries. Depending on the
taste of the blueberries, you may want to add a tad of sugar. Heat
until the bubbling and the blueberries are starting to loose their
perfect round form. Add 1-2 T of cornstarch or potato starch,
depending on how many blueberries you have. Continue to heat until
the mixture turns from cloudy to clear.
Best when served over Rice Pudding.

| Holiday Lutefisk
2 lb lutefisk
2 qt water
2 T salt
Melted butter
allspice
white sauce
Cut the fish into large pieces and tie it in a cheesecloth. Bring
water to a boil in large pot. (Do ot use aluminum) Add salt.
Lower the fish into the water and cook about 10 minutes (simmer).
Remove the fish to serving dish. Serve with the butter, white
suace; sprinkle with allspice.
Basic white sauce:
2 T butter
2 T flour
1 C milk
Salt
Melt butter in saucepan and stir in flour till smooth. Slowly stir
in the milk and cook, stirring constantly until smooth and thick.
Salt to taste.

| Finnish Light Sponge Cake
1 C cake flour
1 1/4 t baking powder
Pinch of salt
2 eggs, separated
3/4 c sugar
1/4 c hot water
1/2 t vanilla
Sift together flour, baking powder and salt. Beat egg whites until
they stand in soft peaks. Gradually beat in 1/4 C of the sugar.
Add hot water and vanilla to egg yolks. Beat until thick. Beat
in remaining 1/2 c sugar. Pour egg yolks over whites, cutting and
folding unti well blended. Fold in flour mixture. Spoon batter
into unbuttered 9" layer or 7-8" tube pan. Bake in 350 oven for
20-30 minutes or until cake springs back when pressed lightly with
finger. Invert on wire rack; let stand until cold. Loosen edges
with sharp knife; ease out of pan.

| Finnish Sour CReam Cake
2 rggs beaten
2 C sour cream
2 C sugar
2-3 drops almond extract
3 C sifted white flour
1 t soda
1/2 t salt
1/2 t cinnamon
1/2 t ground cardamon
Combine eggs, cream, sugar and almond extract. Sift flour with
soda, salt, cinnamon, and cardamon. Add gradually to egg mixture,
beating until butter is smooth and well mixed. Pour into a buttered
tube pan that has been dusted with crumbled sugar cookie crumbs
and granulated sugar. Bake at 350 for 60 minutes or until d one.
Cool 5-10 mintues before turning out of pan. Dust with powdered
sugar and slice very thin and serve.

| Finnish Cheesecake
1 c all purpose flour
1 T sugar
1/2 t baking powder
1/4 c butter
1 egg slightly beaten
1 8 oz carton creamed cottage cheese
1/2 c softened butter
1 c sugar
3 eggs
2 t grated lemon peel
1 T lemon juice
2 t vanilla
Measure flour, 1 T sugar and bkg pwdr into small bowl. Cut in 1/4
c butter until misture resembles fine crumbs. Mix in egg until
crumbly dough is formed. Press dough firmly in bottom of and 1
inch up side of greased layer pan (9 X 1 1/2) with removable bottom.
Heat oven to 350. Place cottage cheese in blender, cover and blend
until smooth. Beat in 1/2 C butter. Measure 1/2 c sugar, 3 eggs,
the lomon peel, lemon juice and vanilla into mixture i blender.
Cover. Blend until smooth. Pour filling into crust. Bake cheesecake
until filling is set and crust i light brown, 40-45 minutes. Cool
on wire rack. Before serving, remove side of pan.

Sprinkle 1 T of sugar and 1 t cinnamon on a pan of sliced apples.
In a small bowl, mix 3/4 c melted butter, 1 c sugar, 1 C flour,
1 beaten egg, 1/2 C chopped walnuts and a pinch of salt. Pour this
mixture over apples. Bake in 350 oven for 45 minutes or until golden
brown.
Serve with whipped cream, lemon sauce or cheese.
