Over the past weekend I got creative again and came up with
anoter home-spun culinary delight! I am lucky to have apple
trees on my property, so this time of year I have the resources
to be creative.
This one in particular was a treat, so I'd like to share it.
APPLE STUFFED PORKCHOPS

( to serve two )
Ingredients: 2 center cut pork chops 1 and 1/4" thick.
1 apple
1 small onion
4 large mushrooms
1/2 clove garlic
1/2 cup seasoned breadcrumbs
2 Tbsp butter, melted
1/2 tsp worcestershire sauce
1/8 tsp ginger
dash rosemary ( very slight )
2 tbsp applejuice or whitr wine
Preparation: Place porkchops flat, bone facing away and make
slit down the side along the center of the
chops, if bone is centered slit both sides down
middle to form pockets for stuffing; slice onion
into rings, set aside about 1/3 of the rings and
finely chop the remainder; peel & pare apple and
cut in half crosswise ( so that the center forms
a star ) Slice one half into rings 1/4 " thick, core
rings, core other half and finely chop remaining
apple. Slice one mushroom thin, finely chop remaining
3 . Lightly toss together breadcrumbs, chopped apple,
mushroom, onion to make stuffing; add worcestershire
pressed garlic and seasoning. Gently stuff into
pockets in chops;
Baking: PLace stuffed chops in shallow baking disk ( like
pie plate ) Cover with remaining onion rings and
thin sliced mushrooms. place an apple ring over each
chop and in center of ring place a pat of butter.
lightly salt and pepper. add dash of ginger, Bake
in 350 oven for 50 minuts to 1 hour, moistening after
1/2 hour with 2 tbsp either apple juice or white wine.
enjoy! I served this with fresh green beans steamed
with 2 strips of bacon.
