| re: lemon cake
get your favorite white cake recipe and use whole eggs
substitute a tablespoon of lemon juice for vanilla and add
2 teaspoons (level) lemon zest (lemon peel). For any special occasion,
use a recipe you KNOW and add or change it a little for different flavor.
That way, you will have a nice cake. Baking a cake is tricky in the
technique, not in the flavoring.
Re: lemon frosting
Your basic buttercream with a teaspoon lemon juice and a teaspoon yellow
food coloring would do it. I put a reply in here a few months back with
several basic frostings recipes in it...now, what number was that???

| When I make a lemon cake, I bake it in a bundt cake pan or an angel
cake pan and instead of frosting it I make a drizzle of confectionary
sugar and lemon juice and just spoon it lightly over the cake, let
it run down the sides. If you like lemon you will love this.

| This can either be eaten as a bread with dinner or as a desert -
it's delicious!
1/2 cup butter or margarine
1 cup sugar
2 large eggs
grated peel of 1 lemon
1 1/2 cups flour
1 teaspoon salt
1/2 cup chopped nuts
1/2 cup milk
Glaze:
Juice of on lemon
1/2 cup confectioners sugar
Heat oven to 350. Grease 9x5x3 inch bread pan. In large bowl, beat
butter and sugar at medium speed. Beat in remaining ingredients
in order give. Bake 45/55 minutes. Cool in pan for 15 minutes.
Mix glaze ingredients. Remove bread from pan and place on a wire
rack (with wax paper underneath). Spoon or drip glaze on warm bread.
Cool completely before slicing.
FYI - 174 calories per 1-inch slice

| There's no leavening in the lemon nut bread recipe. Is that an error,
or are the eggs enough to make it light?

| So sorry, thanks for noticing -- yes it is an error. You should
add 1 teaspoon baking powder.
