1271.0. "COOKIES: Macaroons, All Types" by AKOV12::MILLIOS () Mon Jul 18 1988 15:34

I've invested lots of dollars in these things, so figured I'd finally
take time out and ask around, see if anybody knew the recipe, so
    I could make them myself.

Here in the cafeteria at AKO, we have these coconut macaroon type
things; I've seen the exact same things for sale at other lunch
stop type places in the area, so I know they're produced by some
    company, not the cafeteria itself.

They're about two inches across, an inch and a half high; the only
ingredients I can figure out that they (should) have is coconut,
chocolate chips, and Eagle brand condensed milk. I'm not sure what
else is involved, and what the proportions are.

They remind me greatly of the seven layer cookies that I've made
in the past (graham cracker crumbs, coconut, chocolate chips,
butterscotch chips, some other things, and smother the whole thing
with a can of Eagle); the texture is the same, but it's all coconut,
with chocolate chips. They are baked in an oven, so...

Any help on this would be greatly appreciated.

Just wanted to add that the texture is very moist; not like those
cake macaroons for sale elsewhere... Thick, chewy, and wonderful!

                       Chocolate Macaroons
                       -------------------

    2 Egg Whites
    3/4 Cups Sugar
    2 Tablespoons Cocoa
    1 Teaspoon Vanilla
    2 Cups Coconut

In Sauce pan beat 2 Egg whites, but not to the point that they are
stiff. Fold in Sugar and Cocoa. Heat at medium heat stirring for
5 minutes. Remove from heat and add Vanilla and Coconut, mix until
coconut is coated. Teaspoon these onto a greased cookie sheet.
    Bake in oven 10 - 15 min at 300.
Let cool on waxed paper, and enjoy.

        Makes about 2 dozen.

1271.4Chocolate Chip Macaroons-HelpBRAT::MORINFri Feb 08 1991 14:3624
I am looking for a recipe for Chocolate Chip Macaroon. Here in
Merrimack in the Cafe we have these cookies (not made by the cafe) and
    they are wonderful.

I have done a dir/title and found only two notes. One person was
looking for the same thing back in 1988, and wasn't able to get the
recipe. The other, was not quite the same thing.

So my search continues...does anybody have a recipe. They are very
rich, and moist. The ingredients listed are:

    	Sweetened Condensed Milk
    	Coconut
    	Chocolate Morsels
    	Unbleached Wheat Flour
    	Salt
    	Pure Vanilla Extract

Does anybody have a recipe for anything like this?

    Thanks
    Robin

I must say those suckers are great. About 1/2 c of dough in each one,
and guaranteed to take your mind off your project for as long as the
sugar high lasts. Heavy and sweet, very yummie!

wise philosopher say, "sometimes, you just don't wanna know"...with the
sweetened condensed milk in it, it isn't diet food.

re: recipe. The sweetened condensed milk is your key. Bordens sells
a cookbook for their sweetened condensed milk. Normally, it is advertised
in the papers (sunday) or on the inside of a can label. You send away
for it and pay something like $2.00. I'd bet the recipe is there.

1271.7Passover macaroons avail. in MarchWORDY::STEINHARTPixillatedMon Feb 11 1991 08:3613
You'll soon be able to buy them in the grocery store if you don't feel
like cooking. They are a Jewish seasonal food at Passover. This year
Passover is on March 30 and the macaroons (with no flour in them),
matzah and other goodies are on the shelf at least 2 weeks before the
    holiday.

Another special treat is the kosher white grape juice. It is
delectable, though at the price its not a replacement for Juicy Juice.

The macaroons are seasonal because at PAssover you don't cook with
flour at all, only matzah meal. So regular cookies and cakes are out.
But a lot of special treats have been invented. They tend to be very
sweet and many are rich in eggs, but hey - its only once a year.
