| Uses Rose's Lime Juice...I seem to find that just because the limes
are grown in the Key's doesn't mean they taste any different than
limes NOT grown in the Keys.
And if you're making Key Lime Pie, uses Rose's for that too, and
the pie will be thicker, smoother, and will have more of a bite.
(That's the way they make it at The Bubble Room on Sannibel Island!)

AND a WHOLE LOT sweeter unless you cut the sugar in the basic recipe...
Roses' Lime is a lim syrup that is used in making coctails. My key
lim pie recipe starts with sweetened condensed milk so the additional
sugar of the Roses' Lime would be too much. The idea of using Roses'
sounds good, though, as it does have a nice flavor....a recipe with
sugar added could be modified to use it and taste just wonderful...
HMMMMMMMM....off to the kitchen for a scan of the old cookbooks for
a different recipe to play with!!!

| A Friend of mine was in the Keys; where the recipe for Key Lime
Pie orginated and brought me back a cookbook with regional recipes
from the Keys. The very first one was for key lime juice.
She was nice enough to bring a bottle back as well.
And there is a major difference. Roses is not a substitute unless
you modify the recipe. I would love to find the juice in New England
but it looks like mail order is the only way. There were several
other recipes that called for lime juice included several summer
salads. Nothing compares to key lime juice.
I sort of put it in the same category of there is no substitute
for hearts of palm. BTW A hearts of palm salad with key lime.

| If you are anywhere near Nashua, I happened to notice Key Lime Juice
at Alexander's at the Nashua Mall (not sure, but maybe other
Alexander's locations have it too. It was in the "bar mixers" section
(like where you might find Rose's lime juice, etc). I didn't read
the label, so I am not sure if there are additives like sugar, etc.
It would be the first thing I would try if making key lime pie.

Try Julio's Liquors in Westboro. The Key Lime Juice is in the
gourmet food section, at the very beginning of the first aisle
on the right. Top shelf I believe. (It took me awhile to find it)
