1263.0. "CHICKEN: Grilled with honey and cinnamon?" by AVANT::BERTOT () Wed Jul 13 1988 14:02

I was at a reception at the New Hampsire Highway Hotel and they served
the most delicious chicken I have ever tasted. Unfortunately I
don't know what it was called either. I was wondering if I described
it if someone might know what it was? It had been marinated and
it tasted sweet-maybe honey, but it had something else I keep thinking
I tasted a hint of cinnamon(sp). It did have a crisp outside but
it wasn't fried, maybe placed under the broiler before serving and
this tasted definitely like honey. It was a boneless breast that
had its' skin removed. Gosh was it Goooooooood!!!!! I just may
call the NH Highway Hotel and ASK! Of course if you know this I
sure hope you know how to make it! Thanks in advance

I've got my own recipe for grilling chicken that sounds familiar
and is a bit sweet and very moist. Full chicken breasts, boneless
of course, marinated overnight in a large covered dish with fresh
squeezed orange juice, lemon juice, fennel seed, onion, and a squeeze
of a clove of garlic. Brush with sauce of honey, lemon, and a little
olive oil. Grille over low setting on gas grille or let coals burn
down on charcoal so you don't burn or dry out the chicken (since
I always remove all skin and fat...healthier you know). Turn the
chicken only once and brush again with sauce. I put a little cheese
on it just before removing from the grille(Type of cheese is immaterial
to me) A little grille roasted corn soaked in the husks and lots
of cold beer make this a picnic treat!
