                          SAVORY GLAZED MEATBALLS
    
    Makes about 4 dozen
    
    1 1/2 pounds lean ground beef
    1 8 oz can water chestnuts, drained and chopped
    2 eggs
    1/3 cup dry bread crumbs
    1 tbl. beef flavor instand bouillon
    1 16 oz jar Bama peach preserves
    1 12 oz bottle chili sauce
    1 1.5 package Mrs. Grass Onion Dip N Soup Mix
    Parsley, optional
    
    In large bowl, combine meat, water chestnuts, eggs, bread crumbs
    and bouillion; mix well,  Shape into 1 1/4 in meatballs.  In large
    skillet, brown meatballs.  Remove from pan; pour off fat.  In skillet,
    combine remaining ingredients except parsley; mix well.  Over low
    heat, cook and stir 5 minutes.  Add meatballs; simmer uncovered
    10 minutes.  Garnich with parsley.  Refridge leftovers.

    1/4 c. mayo or salad dressing
    1 8 oz sour cream
    1/2 c. cocktail sauce
    1 4 1/4 oz can shring, drained and soaked
    2 tbs chopped green onion
    1 tsp lemon jiuce
    
    In small bowl, beat cheese and mayo until smooth.  Stir in remaining
    ingrediants.  Chill.  Serve with vegetalbes or pot. chips

    2  8 oz packages cream cheese, softened
    2 tbls lemon juice
    1 tsp worcestershire sauce
    1/2 tsp garlic powder
    2 tbls finely chopped green onion
    3/4 cup chili sauce
    1 6 oz can white crab meat, drained
    
    In large mixer bowl, beat cheese, lemon juice, worcestershire and
    garlic powder until fluffy; stir in onion.  Top with chili sauce
    then crabmeat.  Cover; chill thoroughly.  Serve with assorted crackers.

    3 ripe medium avacados, seeded and peeled
    2 tbls lime juice OR lemon
    1/2 tsp garlic salt
    1/2 tsp sugar
    1/4 tsp pepper
    
    In blender, mash avocados.  Add remaining ingredients; mix well.
     Chill to blend flavors.  Serve with fresh vegs. or tortilla chips.

    2 tbls finely chopped onion
    1 tbls dill week
    
    In medium bowl, combine ingredients; mix well.  Cover, chill serveral

    1/3 c. lemon juice
    1/4 c. catsup
    1/4 c. soy sauce
    1/4 c. veg. oil
    2 tbls. brown sugar
    1/2 tsp garlic powder
    1/4 tsp pepper
    3 pounds ching wing drumettes or chicken wings, cut at joints and
    wing tips removed
    
    To make teriyaki marinade, combine all ingredients except chicken;
    mix well.  Place chicken in shallow dish, pour marinade over.  Cover;
    refridge for 6 hours or overnight, turning occasionally.  Preheat
    oven to 375.  Arrange chicken on rack in aluminum foil lined shallow
    baking pan.  Bake 40 - 45 minutes basting occasionally with marinade.

    4 C saltine crackers, crushed
    1 C butter, melted
    1/2 tsp. curry powder
    2 C sweet onion, chopped medium fine and lightly salted
    1 1/2 C cheddar cheese, grated
    3 C milk, scalded
    3 eggs, lightly beaten
    1 tsp. salt
    dash of red pepper
    parmesan cheese
    paprika
    
    Coat crushed cracker crumbs with mixture of melted butter and curry
    powder. Line an 11x16-inch pan with 3/4 of cracker mixture. Spread
    chopped onion over crackers and cover with cheddar cheese. Combine
    scalded milk with eggs, salt and pepper. Pour over ingredients in
    pan.. Sprinkle on balance of crackers. Top with light layer of parmesan
    cheese and paprika. Bake at 375 degrees for 25 minutes. Cut into
    2-inch squares. Serves 40. (If the crowd is smaller, lets say to
    20, then the amount of ingredients is cut in half).
    
    NOTE: This is much tastier when served warm. A sprig of parsley
    adds a festive touch!

Mozzarella con Funghi

2 tablespoons melted butter
1/2 pound white mushrooms
8 slices whole wheat bread
8 thin slices mozzarella cheese
chopped fresh oregano or marjoram
butter for frying
herb springs for garnish


Melt butter in a saute pan and saute mushrooms until tender.  Lay out 
4 slices of bread.  Top each with a slice of cheese and some mushrooms.  
Sprinkle with herbs.  Top each with another cheese slice and another 
slice of bread.  Press together.

Lightly pan-fry sandwiches in a little butter, turning once.

Cut each sandwich into 3 bars and top each with an herb spring.  Makes
a small quantity of delicious hot appetizers.  You may want to increase
quantities ... these things go quickly!
