    i have been searching for a different tartar sauce recipe for some
    time now and haven't found anything, even in this file.  nothn bothers
    me more when you have a nice piece of fried seafood and a bland
    tartar sauce to go with it.  even worse is when the sauce is
    overpowered with the mayo.  the usual recipe i have is just mayo
    and relish. 
    
    anyone got any ideas on how to liven this up?

    Whip 2 Tablespoons white wine vingar into 1/2 cup mayo.(Dribble
    this in or it will curdle the mayo.) Than whip 1/2 cup plain yogurt
    into the mayo.
    
    Add the following
    2 Tablespoons minced onion
    1 Tablespoon minced capers
    pinch dill weed and celery seed cushed

    i have tried the horseradish in earlier attempts (.2) and haven't
    found the taste i'm looking for.  i guess it was too harsh.  .1
    looks good but no one else likes yogart besides me in my family.
    vinegar was suggested, along with some white and black pepper (Maybe
    cayenne too), and then i was thinking on the lines of some crushed
    onions and/or garlic minced.  whatdaya think?

    Try mixing in some honey and celery seed.  In the abscense of honey,
    try using sweet pickle relish instead of regular relish, or the
    juice from the sweet pickles - the spices and seeds add a different
    flavor.  This is also good for cole slaw dressing.

    This always goes over well......however,I don't measure anything
    (I use the Italian method )  just mix and taste :-) This is a start
    
    
    1. About 2 tablespoons of mayo
    2. About 2 tablesoons of sour cream
    3. about 1-1 1/2 teaspoons of relish
    4. Sometimes I add a little vinegar

    The NewYorkTimes cookbook (Craig Clairborne ed.) has a great tartar
    sauce recipe in it. It almost tastes like a mock Bernaise and is
    good on lots of things besides fish. It tastes even better after
    being in the fridge for a day or two and the flavors have a chance
    to marry. Try it you might like it.

This one never fails to please - pretty simple, too.

Finely mince one good sized (3 inch) kosher dill pickle and one small-medium
(2 inch) onion and about tablespoon of capers. Add enough mayo (about half a
cup) for the consistency you're looking for. Let sit in the fridge for at least
half an hour before serving. If you like it a bit zippier, add a teaspoon of
worcestershire sauce.

To make mine, I mix together (to taste):

Light mayonaisse
Sweet relish
Onion powder
Lemon juice

It's quite good!

Hey, there's nothing wrong with using relish as an ingredient.  I kind of
agree with you about the onion powder, although I still think you could
be a little nicer about it.

    I was being nice..in England its called pulling your leg.
    If the humour doesn't travel I apologise.I refuse to take life
    seriously where cooking is concerned.If anyone who has slaved and
    spent half their week-end making a sauce to find the steak they put it
    on tastes like grandads bootsoles (you know where I'm coming from now
    everybody) and you'd planned the dinner party for weeks didn't have a 
    sense of humour they would cry,commit suicide or give up and eat at 
    Burger King.Shock Horror.

    Geoff,

	It does taste wonderful.  It's basically an adaptation of a recipe
I have in one of my cook books.  It has a nice little zing to it, is very
"fresh" tasting, and whips up in no time.  You can use fresh onions if you
prefer, but it's great just the way I said!


By the way, I hate McDonalds...
