1173.0. "Fishcakes" by AQUA::SAMBERG () Tue May 24 1988 14:06

	I'm looking for a good old-fashioned codfish cake (with
	potatoes) recipe.  Anybody got one?

    Easy. I used to use a receipt, but don't need one any more.

    Mix together about equal parts of cod and cooked mashed potatoes.
    Then mix in thick white sauce as a binder. Be sure the final
    consistency is such that it'll hold up during the browning/frying
    stage. I also add finely chopped onion and garlic to the white sauce,
    with enough salt, pepper, and whatever other seasoning appeals to me,
    to taste.

    If the consistency is too thin to keep its cake shape, add more
    cooked mashed potatoes, the dryer the better. (I've even added
    the uncooked flakes, if extra dryness is needed.)

    I'm also fond of salt cod -- the kind that comes in those little
    wooden boxes. Simply soak it overnight, changing the water a couple
    times before going to bed. The next morning, rinse it a couple
    more times, and voila, lovely "freshened" cod. Most tasty. MMMMMMmmm
