I hope this recipe was not repeated somewhere else, but since I
think it's delicious, I wanted to share it with you since I am
new to this conference:
Ohio Buck-Eyes (Peanut Butter Balls)
12 ounces creamy peanut butter
1 16 ounce package powdered sugar
1/2 cup margarine - (at room temperature)
1 teaspoon vanilla
1 6 ounce package chocolate chips
2 Tablespoons Crisco
Mix peanut butter, sugar, margarine and vanilla together. Shape
into small balls. Put on a cookie sheet lined with wax paper.
Refrigerate until hardened. Melt Crisco and the Chocolate Chips
in a double boiler until melted and pour into a small cup. Insert
toothpicks into peanutbutter balls and dip into the chocolate mixture
until they are about 3/4 covered. Refrigerate. Enjoy.
Yield: About 5 dozen
Note: When my mother made this recipe back East, she said the
peanut butter mixture was sticky so refrigerating it helped.
However, the first time I tried this recipe was out in
California and the mixture was DRY! So I added some drops
of milk or vanilla just enough so the mixture formed a nice
ball. Experiment - whatever fits your needs.

I have made this, but I use some parafin to help keep the chocolate
from melting so quickly, I use 1/4 bar to one batch of Peanut Butter
Balls. I do these at Christmas and put them in small decorative
cans, and give them as Christmas gifts to fellow employees, So
far I've had nothing but raves.... I personally dont like peanut
butter, but I know that this is most people's favorite.

This delicious 'Peanut Butter Balls' recipe is a little bit different, but we make them every Christmas. I will have to try the version in .0 also! Peanut Butter Balls 1 egg white 1 tbsp cold water 1/4 cup evaporated milk 1/8 tsp salt 1 tsp vanilla extract 1/2 cup peanut butter Mix the above ingredients together, add 5 cups confectioners sugar and stir to blend ingredients well. Chill mixture to thicken slightly. Shape into small balls and roll in chopped nuts (if desired). Serves 5 dozen. Enjoy! Don Whiting Jr. | |||||
