    WHO CAN HELP ME?
    
     My girlfriend has been put on a milk-free dieet and therefore can't
    eat many desserts, cake's, chocolate etc. The problem is that she
    likes these very much. Does anyone have any recepies for these without
    milk. I have a few but can't find very much.  Please help me

    The information I've read on the back of the cartons of
    Soy "milk" (found in my local health-food store) indicates
    that it can be used to replace milk in many concoctions.
    
    You could try the recipe for Thai ice cream, made with coconut,
    that's in this file somewhere.
    
    Try things made with fruit.  Often you can use fruit-juice to
    replace milk in things like quick-breads and muffins.  Some
    of my muffin recipes specify "milk or juice" as the liquid
    ingredient.  Of course, pies are made without milk, and she could
    put a scoop of italian ice (milk free) on top in place of the
    ice-cream.  Just stay away from the cream pies.
    
    Has your girl-friend asked her doctor for a recipe book?  Often
    doctors will have a list of resources, since they know they'll
    have little success putting someone on a restricted diet unless
    they supply some recipes!  Or, try the library.  Librarians are
    often good at locating hard-to-find information and, in fact,
    relish the chance to meet a challenge.

Your girlfriend cannot have MILK chocolate, but if the only allergy is to
milk, DARK OR SEMI-SWEET CHOCOLATE IS STILL OKAY - it has no milk in it!

Knowing this, you can make chocolate desserts that use some soy milk to
substitute for any milk the recipe calls for.  Also, in America we have
frozen soy cream substitute products that may be defrosted and used to
cook things or cream the coffee...they can be used as a substitute for
real cream in recipes.  Some can even be whipped to make a kind of
whipped topping.  Check health food stores for soy milk substitutes.

     I now have a realy big problem.
    
    When I told my girlfind I'd found a kind of milk she could drink
    (soymilk) she say "it isn't soy milk or?". I said yes and the she
    replied she couldn''t have that either. It isn't the lactose that
    is a problem but something with a difficult name. Is there any other
    replacement for milk or are there recepies with water instead of
    milk. Any suggestion is very welcome!

    Can you find out what it is she's allergic to?  Soy milk is made
    from soybeans and water - nothing else - so there's little connection
    that I know of between milk and soy milk allergies.  So I'm somewhat
    at a loss of what to suggest.  Perhaps it's some type of protein?
    
    Anyhow, you can use fruit juices in muffin mixes - just replace
    the milk with fruit juice.  Make it a sort of juice that goes with
    the muffin - orange juice would be delicious in cranberry muffins,
    for example, and grated orange peel could be added for a little
    more zing to the flavor.  Pineapple juice would be good in something
    like oatmeal muffins.  If you don't want too strong a flavor from
    the juice, you could use apple juice.  You would not want to use
    plain water in these, since you need the acidity of milk or juice
    to make the leavening (baking soda or powder) work correctly, from
    what I've read.
    
    Any luck with getting recipes from her doctor?

    Hi tracy
    
    The problem is cheese proteine (is that the correct way to spell
    it?). This stuff is in a lot of products even those without milk.
    Even the cocosmilk from the thai ice cream can't be used because
    there is milk proteine in it, wich can convert to cheese proteine.

    Almost any recipe that calls for milk, excluding cream based sauces,
    can be substituted for Ginger Ale or any of the less powerful flavored
    tonics/sodas, or whatever you call soft drinks in your area.  My
    mother has a similar problem, she has made cakes, cookies, pancakes,
    scrambled eggs, etc. with tonic water, ginger ale and the likes.
     She has even used tonic/club soda water in tomato soup,  not bad
    even if I do say so.
    
    Can she eat coconut/or the coconut milk, my mother can use that,
    because it is really not a milk product.  That makes the BEST Coconut
    cream pie you ever drooled over.....  Recipe to follow.. Real simple.
    
    Make a simple vanilla pudding using coconut milk in place of the
    real milk.  I think you will have to use a recipe from scratch (I
    have one at home if you need it, most store bought bases have milk
    products in them).  Add plenty of fresh grated coconut,  I run mine
    thru the food processor, put in either a graham cracker shell or
    a single curst pie shell.
    
    That makes me hungry, i havent made that for years.  
    
    My mother is away on vacation now, but when she returns I will see
    if I can get together some more recipes for you.

A while ago I recieved these recipes, maybe somebody likes them too so here 
they are:

			PINEAPPLE UPSIDE DOWN CAKE

1 1\4 Cups Flour
1 Cup Sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
3/4 pineapple juice
1/3 cup shortening
1 egg
1 teaspoon vanilla
1 cup brown sugar
1/2 cup margarine melted
pineapple rings
marachino cherries

Heat over to 350 degrees.  Beat first 8 ingredients together.  Melt margarine
in baking pan 9 inch round or 9X9 square.  Sprinkle brown sugar evenly over 
margarine and arrange pinapple slices over brown sugar mixture.  Place
a marachino cherry in the center of each pineapple ring.  Pour batter over
the pineapple rings and bake 35 to 40 minutes.  Turn the cake out on a
plate to get the upside-down effect. This is great served warm.

			GINGERBREAD

2 1/3 cups flour
1/3 cup sugar
1 cup molasses
3/4 cup hot water
1/2 cup shortening
1 egg
1 teaspoon baking soda
1teasponn ground ginger
1 teaspoon ground cinnamn
3/4 teaspoon salt

heat over to 325 degrees.  Grease a 9 X 9 X 2 pan. Beat all ingredients
together.  Pour in pan and bake for 50 minutes.   This is delicious with 
whipped cream, perhaps applesauce would make a nice toppings.

			PIE CRUST

1/3 cup plus 1 tablespoon shortening
1 cup flour
1/2 teaspoon salt
2 to 3 tablespoon cold water

Cut shortening into flour until the paticles are the size of small peas.
Add 1 tablespoon of water at a time until the mixture is moist.  Roll
out on floured board.  This is for a single crust pie.  For a double
crust pie double the batch.  Bake at 475 for about 8 to 10 minutes.
If you are baking the crust then filling, make sure you pierce the inside
of the shell with a fork to prevent "blisters" from popping up.

			PIE FILLINGS


Apple:

6 Cups pared apples
3/4 cup sugar
1/4 cupflour
Optional: Cinnamon, nutmeg (1/2 teaspoon each)

Toss all ingredients together.
Prepare double pie crust.  Put filling in pie plate and cover with top
crust.  Cut vents with a sharp knife. (I always make a pastry rose for the top)
Cover edges with foil to prevent too much brwoning and bake @425 degress for
40 to 50 minutes.

Blueberry/Strawberry

4 Cups fresh blueberries/strawberries
1 tablepoon lemon juice
1/2 cup sugar
1/3 cup flour

Toss all ingredient together and put together like the apple pie.

			
Peach:

5 cups fresh peaches
1 teaspoon lemon juice
1 cup sugar
1/4 cup flour

Toss all ingredients together and put together like the apple pie.


			Lemon Meringue Pie

1 1/2 cup sugar
1/3 cup plus 1 tablespoon cornstarch
1 1/2 cups water
3 egg yolks
3 tablespoons margarine
2 teaspoons grated lemon peel
1/2 lemon juice
2 drops yellow food color (optional)

Bake one crust pie shell.  Mix sugar and cornstarch in saucepane. Slowly
add water.  Cook over medium heat until mixture starts to thicken and boil.
Boil for 1 minute.  Stir half of hot mixture into egg yolks.  Blend this
back into reaming mixture.  Boil for one minute.  Remove from heat and stir
in margarine lemon peel lemon juice and food color.   Meringue: Beat egg
whites until stiff add 1/3 cup sugar.  Pour lemon mixture into cooked
pie crust and top with meringue, making sure you seal the edges.  Brown 
in 400 degree oven for 10 minutes.  Serve when cool.  

This can also be a lime pie by decreaseing the cornstarch to 1/3 cup.
Omit the margarine. Substitute lime peel and lime juice for the lemon 
and add green food coloring.

			Apple Crisp

4 Cups pared apples
2/3 cup sugar
1 teaspoon cinnamon
Grease baking dish and put in apple mixture.
Mix 1/2 cup softened maragarine with 1/2 cup sugar and 1/2 cup flour.
Sprinkle this on top of the apples.  Bake @350 degreees for 45 minutes.
This is my families favorite.  We always serve wtih icecream, but it is
delicious plain.

1 2/3 cup flour
1 cup brown sugar

1/2 teaspoon salt
1/3 cup chopped almonds
1 jar marachino cherries (reserve syrup) 
1/3 cup vegatable oil	
1 teaspoon vinegar
1/2 teaspoon vanilla

Heat oven to 350 degrees. Mix flour, sugar, cocoa, baking soda, salt,
and almonds with fork.  Add enough water to cherry syrup to make 1 cup 
liquid.  Add liquid to flour mixture.  Pour into ungreased 8 X 8 pan
and bake 35 to 40 minutes.  Sprinkle with powdered sugar.

Variations:

Maple nut Cake:

Omit cocoa, cherries and almonds.  Substitute 1 cup water for syrup/
water mixture. Stir in 1/2 teaspoon maple flavoring, add 1/2 cup pecans.

Oatmeal Molasses Cake:

Omit cocoa, cherries, almond and vanilla.  Stir in 3/4 cup quick oats
and 1 teaspoon allspice.  Substitute 1 cup water for the syrup/water mixture
and stir in 2 tablespoons dark molasses.

Pumpkin Cake:

Omit cocoa, almonds, cherries and vanilla. Stir in 1 teaspoon allspice
Sustitue 1/2 cup water for the syrup/water mixture and add 1/2 cup pumkin.

Chocolate Mint Cake:

Omit almonds and cherries.  Substitute 1 cup water for syrup/water mixture.
Stir in 1/2 teaspoon peppermint extract.

			APPLESAUCE CAKE

2 1/2 cups flour
2 cups sugar
1 1/2 taspoon baking soda
1 1/2 teaspoon salt
1/4 teaspoon baking powder
3/4 teaspoon ground cinnamon
1/2 teaspoon cloves
1/2 teaspoon ground allspice
1 1/2 cups applesauce
1/2 cup water
1/3 cup shortening
1 cup raisins
1/2 cup walnuts

Heat oven to 350 degrees.  Grease and flour 13 X 9 pan.  Mix all ingredients
POur into pan bake for 60 to 65 minutes.

Top with Butterscotch Meringue

Butterscotch Meringue:

2 egg whites
1 cup brown sugar
1 tablespoon lemon juice
1/2 cup finely chopped nuts

Beat sugar and lemon juice into egg white, beat until stiff.  Spead over
hot cake sprinkle with chopped nuts and brown for 8 to 10 minutes in 400 
degree oven.

			DATE CAKE

1 2/3 cups flour
1 cup sugar
1 teaspoon baking powder
1/2 teaspoon salt
1 cup water
1/4 cup shortening
1 egg
1 teaspoon vanilla
1 cup cut-up dates
1/2 cup finely chopped nuts

Heat oven to 350 degrees.  Grease and flour 9 X 9 pan.  Beat all
ingredients pour into pan and bake for 45 to 50 minutes.

    Please send me those recipes, sounds great.
    
    I believe cocosmilk is ok. I had bought some sweetend cocosmilk
    they us milkpowder to sweeten it so thats the reason.
    My girlfriend will take some pure cocosmilk to her doctor soon. He can
    tell in a minute if it's allright.
