                      CHINESE CHOP SUEY
    
    
    3 LBS PORK (CUBED)
    1 C OIL
    1 LG BUNCH CELERY (CHOPPED)
    6 OR 7 GREEN PEPPERS (CHOPPED)
    1-2 LG OR SEVERAL SM ONIONS (CHOPPED)
    2-3 LB BEAN SPROUTS (FRESH)
    LA CHOY SOY SAUCE
    SALT AND PEPPER
    
    NOTE: USE A CHEAP PORK ROAST (BUTT) NOT TOO LEAN, ITS BETTER FOR
          THIS.  ALSO, THE VEGETABLES SHOULD NOT BE CHOPPED TOO SMALL.
    
    IN A VERY LARGE POT, COOK PORK IN OIL TIL BROWN.  ADD CELERY AND
    COOK WHILE YOU CHOP REST OF VEGETABLES.  ADD PEPPERS AND ONIONS,
    COOK TIL ALMOST TENDER.  ADD BEAN SPROUTS, COVER AND COOK FOR ABOUT
    ANOTHER 1/2- 3/4 HOUR TIL EVERYTHING IS TENDER AND LIQUID REACHES
    TOP OF VEGETABLES. *** DO NOT ADD ANY WATER TO THIS DISH, YOU WILL
    FEEL THAT ONCE YOU HAVE ADDED THE SPROUTS THAT IT NEEDS WATER BUT
    THE SPROUTS CREATE WATER IN THIS DISH, JUST KEEP TURNING IT OVER
    TIL THAT HAPPENS*** ADD SOY SAUCE TO TASTE.
    
    THIS IS MY FATHERS RECIPE WHICH ALWAYS WENT OVER VERY BIG AT HIS
    HUNTING AND CLUB FUNCTIONS. HOPE YOU ENJOY.

    FORGOT TO TELL YOU THAT THIS WILL PROBABILY NEED TO BE THICKENED
    A LITTLE AFTER YOU ADD THE SOY SAUCE.  I USE CORN STARCH.

    		Hamburger Chop Suey/LaChoy!
    
    1 1/4 lbs ground beef/chicken or turkey
    1 medium onion, chopped
    1/4 cup (1/2 stick) butter
    2 1/2 tsps salt
    1/4 tsp pepper
    2 cups diced celery
    1 1/2 cups water
    1/2 cup sliced water chestnuts
    2 cans bean sprouts, drained and rinsed in cold water
    1 jar (4 1/2 oz) sliced mushrooms, drained
    2 tbles chopped pimiento
    
    Thickening:
    
    3 tbles cold water
    3 tbles cornstarch
    1 1/2 tbles soy sauce
    1 1/2 tsps sugar
    1 tbles LaChoy Brown Gravy Sauce (haven't found this in the grocery
    stores for a long time now)
    
    Brown hamburger and onion in butter til lightly browned.
    Add salt, pepper, celery and water.  Bring to boil, lower temperature
    to simmer and let cook another 15 minutes.
    Add remaining vegetables, heat until hot. 
    Combine thickening ingredients, add to meat/vegetable mixture.
    Cook until slightly thickened, stirring constantly.
    Serve over hot cooked rice.  Top with crispy chow mein noodles.

    Chop Suey means 'a little bit of this, a little bit of that', sort of
    mixing the left over together,and make a dish out of it. This dish is
    definitely American-Chinese. I have never heard of it back in Hong
    Kong, and China. Neither have I ever heard of egg rolls (we only have
    spring rolls, they are much smaller), and pu-pu platters.
