1148.0. "PARTY: Wedding Buffet Menu Needed" by MYVAX::LUBY (love them furry terrorists) Thu May 05 1988 13:14

A friend of mine is getting married this summer and I am her
Maid of Honor. For the wedding, which will be VERY untraditional
she doesn't want to have a sit down meal, or even a meal for
that matter. She wants for everyone in her wedding party,
some other close friends, and family to BRING food.

So, I need some suggestions of what would be good to bring.
Just to clarify, the food has to be eaten standing up so
the food should be finger food. And it shouldn't need heating
up since nobody will want to bother. And if it freezes well,
let me know since I have enough to do as Maid of Honor without
    	cooking the day before too!

Some ideas of my own were :
                pre-made mini party sandwiches
cheddar-spinach squares (best hot but room temp OK)
    		Vegetables and dip
Tortilla chips and salsa or guacamole
    		Other chips and dips
    		cheese and crackers
    		fruit (grapes, cherries, strawberries)
    		Deserts of all types

This is ALL I can think of!!! Any suggestions would be
appreciated, especially if you can come up with something
original!!! (Unlike the above) Oh, cost is an issue.
I can't afford to provide Shrimp Cocktail!!

1148.1CRAB STUFFED CHERRY TOMATOESBAGELS::GLENNGlenn Christensen, SCS/NSD, Dtn:226-5553, Loc:LKG2-A/W2Thu May 05 1988 17:2927
    Karen,
Here's one that I have used at any number of parties and goes
over VERY well. I have made it two days ahead of time, but not
any earli. I know it is crab, but it's not a lot of crab, and it
goes a LONG way. It can be served either hot or cold (I serve it
    cold).

    		CRAB STUFFED CHERRY TOMATOES

1 pint cherry tomatoes 1/4 c. finely chopped green
    1 can (5 oz) crab meat,rinsed, pepper
drained, cartilage removed	1/2 tsp parsley flakes
2 green onions finely chopped	1/4 tsp dill weed, optional
1 tsp white wine vinegar 2 tbsp seasoned dry bread crumbs

Cut stem end from tomatoes and scoop out pulp. Combine remaining
ingredients in small mixing bowl. Stuff tomatoes with crab mixture.
For heated serving: Place tomatoes on paper towel-lined plate,
with smaller tomatoes toward center. Microwave at High 2 to 4 minutes,
or until heated through, rotating plate once or twice. Sprinkle
    with paprika.
For cold serve: Sprinkle with paprika, cover with plastic wrap,
    and refrigerate until needed.

Yield: serves 5 people 5 tomatoes....I have found it to serve more.

Cherry tomatoes are not the only thing to stuff. Try removing the
seeds from a cucumber, leaving you only a long tube. This works
best with an apple corer.Fill it with whatever salad
(egg, chicken, tuna, etc) you want and slice it across the grain.
One little trick is to add pimento or black olives to whatever you
fill your vegetables with for color.
This works also for zucchini and summer squash.

Or you could get party toothpicks and stick a cube of cheese, an
olive, cherry tomato, etc. on it. Might look pretty and it's something
people can just pick up and eat.

You could also have a 'party mix' : goldfish, pretzels, unsalted
p-nuts, and popcorn. (The pretzels and goldfish have enough salt
    on them already).

Should be an interesting reception! Have Fun!
1148.6Good for mushrooms too!EMI::HOTTFri Nov 23 1990 18:0511
    Re: .1

First, a question: Should the tomato pulp be included in the crab
mixture? I assumed not but the mixture seemed to need moisture
    -- only my personal preference.

On the other hand, never being one to shy away from modifying a
good recipe, I used this mixture to stuff mushroom caps (didn't
have any cherry tomatoes handy) and my guests loved it.
