My father (in Florida) has recipes which require Light amber maple syrup (he said he thinks it might also be called AA or AAA maple syrup), so he asked me to send him some (I'm in Massachusetts). The only problem is that I can't find any! I've found lots of medium amber and dark amber syrup (the kind you'd use on pancakes, etc), but no light amber (which I believe you'd only use in recipes, not directly on already prepared food). Does anyone know where I might be able to get some? I'm located in Sudbury, Mass. Thanks very much!

You might be too late this year. Light Amber is made only from the first sap run of the year (I'm told), later in the season the makeup of the sap is different. The resulting color AND flavor are completely different. We get ours from Tuttle's on Intervale Road in Wilton, New Hampshire. Get there from 101 west out of Milford. We've been going there for years. I think it was $52 for a gallon this time -- I don't want you to be shocked when you get there. We don't buy any other maple syrup. Art | |||||

You might give the Wayside Country Store a call and ask if they carry specifically "light amber" syrup.... Another place would be Idlewilde Farms, 364 Central St., W. Acton, MA...263-5943... Hope this helps... Mary | |||||

Light amber will also be known as "Fancy" syrup. Medium amber is known as "Grade A". Grade B is good strong stuff for waffles and pancakes, and grade C is super strong - and dark - and often used as an additive in things like Aunt Jemima (sp). Hope that helps. - rick |
