| Please describe the desired texture in more detail.
To me a cake-like texture means a delicate crumb; a cookie-like
texture a crisp crumb even though some cookies are chewy; a chewy
texture to me means sort of like a brownie. The hermits my wife
used to make are rather chewy (if I remember correctly). If they
were dropped on the floor, her hermits would probably "thud" and
only break in two or three pieces.
Be creative, describe your druthers.

| I haven't tried the recipe so I can't vouch for it, but I have a
box of Sunmaid Golden Raisins at home, and there's a recipe for
hermits on the back.

sugar 1 cup
oil 1/2 cup
flour 3 cups
soda 1 tsp
salt 1/2 tsp
nutmeg 1/2 tsp
cinnamon 1/2 tsp
milk 1/2 cup
molasses 1/2 cup
raisins 1 cup
Cream sugar and oil. Add milk and molasses. Add sifted dry ingredients
and raisins. Bake on a greased cookie sheet at 300 for 20 minutes.

| For some reason, I always thought hermits had nuts instead of raisins-
I don't know if this is what you're looking for, but it makes a
spicy bar cookie with raisins and has a slightly more cake-like
texture than brownies. We always called them Hilda Cookies, that's
why "hermits" didn't immediately ring a bell!
Hilda Cookies
In saucepan, combine:
1 and 1/3 cups water
1/3 cup shortening
2 cups raisins
1 cup brown sugar
2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp cloves
Boil for 3 minutes and cool. Then add 1 tsp salt and 1 tsp soda
that has been dissolved in 2 tsp water first. Blend in 2 cups flour
with 1 tsp baking powder. Bake in a greased jelly-roll pan or @
10" x 14" pan at 325 for 25-30 minutes.

| HERMITS
After many attempts to re-create the perfect recipe, someone gave me
their version which I modified to suit my taste. Hope you all enjoy
it.
MONA'S HERMITS
Cream together in a large bowl:
1 Cup Sugar
1/2 Cup Vegetable Oil
Sift together in a small bowl:
3 Cups All-purpose Flour
1/2 Teaspoon Salt
1 Teaspoon Cinnamon
1 Teaspoon Baking Soda
1/2 Teaspoon Nutmeg
1/2 Teaspoon Ginger
In a measuring cup, stir together:
1/2 Cup Milk
1/2 Cup Molasses
Add the dry ingredients alternately with the milk and molasses into
creamed mixture using mixer at medium speed.
With a wooden spoon or sturdy spatula, (mixture is fairly stiff)
fold in:
3/4 Cup Raisins
1/2 Cup Chopped Nuts
Spread on a greased 10X15" baking sheet and bake @350 degrees for 20-25
minutes. After cooling for 10 minutes, cut into squares (leave them in
the pan), and cover tightly with aluminum foil. This helps to keep
them moist. When cool, you can remove them and store in an airtight
container lined with plastic wrap. Makes 20 hermits.
