    Does anybody have any good vegetarian recipes?  I haven't eaten
    meat for about 8 years now, but still have difficulty in finding
    interesting dishes when entertaining meateaters.
    
    I'd be particularly interested to hear from meateaters who have 
    enjoyed a vegetarian dish lately.

this is THE best recipe for zucchini that I -and many others- have tasted!
     Even avowed zucchini-haters have liked it!  It is also really easy
    to make:
    
    4 c. thinly sliced zucchini and/or yellow squash
    2 c. boiling water
    2 eggs
    1/2 c. chopped bell pepper
    1/2 c. chopped onion
    1 c. mayonnaise
    1 c. grated parmesan cheese
    salt and pepper to taste
    
    Cook zucchini in water until just tender, not mushy.  Drain well.
    In medium bowl, beat eggs.  Add bell pepper, onion, mayonnaise,
    cheese and salt and pepper.  Mix well.  Fold in zucchini.  Turn
    casserole into a greased 1-1/2 quart baking dish.  If desired, dot
    the top with a little butter and bread crumbs.  Bake in a preheated
    350-degree oven for 30 minutes or until inserted toothpick comes
    out clean.  If top if browning too quickly, cover lightly with aluminum
    foil.  ENJOY! and let me know how you like it.
