From the Frugal Gourmet Cooks with Wine
2 garlic cloves, sliced
2 tbl olive oil
2 bunches fresh broccoli, cleaned and sliced, the heavy part of the
stems discarded
1/4 cup dry white wine
1/4 cup chicken stock
salt and pepper
3 tbl sliced almonds
2 tbl fresh lemon juice
2 tbl melted butter or olive oil
Heat a large lidded frying pan or wok and saute the garlic in oil. Add
the broccoli and toss in the oil. This will help retain the bright
green color. Add the liquids and toss. Cover and simmer until the
broccoli is barely tender, about 10 minutes. Check for salt and
pepper. Garnish with almond and top with the lemon juice mixed with
the oil or butter. do not use the lemon juice by itself, or you will
bleach the broccoli. Mix it with the butter or oil.
