		COTTAGE CHEESE HERB BREAD

INGREDIENTS:

2 cups small curd cottage cheese
1 stick margarine or butter (softened)
2 eggs
1 and 1/2 teaspoon salt
10 tablespoons dried dill weed or to taste
10 tablespoons dried chopped chives or to taste

2 packets yeast
1/2 cup warm water
2 tablespoons honey or sugar
white flour (depending on the temp and humidity, amount may vary)

Mix yeast in warm water and add sugar.  Set aside to proof (bubble a 
little so you know its alive).

Mix cottage cheese, butter, eggs, and seasonings, and add yeast mixture and
mix well.

Stir in enough flour to make a stiff dough and then add
approx 2 - 4 cups more flour by kneading it in.  You have kneaded
the bread enough when it forms a compact ball, is smooth and not
sticky to the touch.  place in a well oiled bowl, turning to coat with
oil, and cover with a towel and let it rise for approx 30 to 45 minutes
until doubled in size.  

Punch down, cut to three equal chunks, roll each chunk by hand into a
long thin piece, and form a braid with all three chunks.  Place on a
well oiled cookie sheet, cover with towel and allow to rise approx. 30
minutes.  bake in 350 degree oven until browned, and hollow sounding
when rapped with the knuckle.

Serve as a sandwich bread with tuna salad, or slic�ed turkey breast.

I don't recommend whole wheat for this recipe as the co�lor of thes
makes it quite pretty....lightning won't strike if you don't eat whole
wheat all the time, right?
