| Here is a "general" recipe I used to make. Unfortunately, I never
write things down so the measurements are estimates:
3-6 cups oats, mixed with honey and melted margarine - just enough
to coat the mix, but not soak it. You may also add cinnamon if
for variety.
Add peanuts, walnuts, almonds, pecans, sunflower seeds and any other
NUTS you may like - varies according to your taste.
Spread this mixture out on a cookie sheet and bake 30-45 minutes
in a 350 degree oven, mixing the stuff every 10 minutes or so.
When it's a nice golden brown, it's done.
Now, add your raisins, prunes, apricots, dates and any other DRIED
fruits. It's important to add these AFTER the cooking is finished,
because if cooked, they'll puff and swell and then dry out too much.
Store in airtight containers.

| 125 mL butter or margarine 1/2 cup
125 mL corn syrup 1/2 cup
125 mL firmly packed brown sugar 1/2 cup
125 mL each flaked coconut and 1/2 cup each
raisins
1500 mL kellogg's just right cereal 6 cups
Melt butter, corn syrup and brown sugar in a large saucepan
over medium heat. Increase heat to high and bring to a full
boil, stirring continuously. Remove from heat and stir in
coconut, raisins and cereal until completely coated with
sugar mixture. Turn into a 15 x 10" greased jelly roll pan
or cookie sheet and press down evenly and very firmly. Let
stand for 2 hours , cut into 1 x 3" fingers. Makes 50 granola
fingers.

| 5 cups oatmeal
1 cup slivered almonds
1 cup chopped walnuts
1 cup sesame seeds
1 cup wheat germ
1 cup shredded coconut
1 cup sunflower seeds
1 cup safflower oil
1 cup honey
1 cup raisins
1 cup dried currants
Combine first 7 ingredients in large bowl; mix well.
Heat the oil and honey until just warm. Pour over the dry ingredients;
mix well. Spread out in a thin layer in several shallow pans; bake at
300F for 45 minutes or until lightly browned; stir occasionally.
Cool; add raisins and currants. Store in tightly covered containers in
refrigerator. Makes about 15 cups which should keep for weeks.

| HOMEMADE GRANOLA,
4 1/2 CUPS ROLLED OATS
1 1/2 CUPS CHOPPED NUTS
1 CUP PUMPKIN SEEDS (OPTIONAL)
1/2 CUP SUNFLOWER SEEDS
1 10 OZ BAG OF COCONUT
1 1/2 CUPS RAISINS
1 1/2 CUPS CHOCO CHIPS
1/2 CUP OIL
1 10 OZ JAR OF HONEY
1 TABLESPOON OF VANILLA
Mix dry ingredients, add oil until well coated.
heat honey and vanilla until it thins out, blend
honey with dry mixture till well coated.
spread on cook sheet, bake at 450 for 10 minutes and stir.
lower heat to 300 and bake for 20 minutes, stirring after
10 minutes. let cool completely for 20 minutes. refrigerate.
this keeps for up to 3 weeks in airtight container. It
usually is a big hit. Enjoy!!!!!!!!!!

| Here's my granola recipe.
6 C old-fashioned oats
1 C powdered milk
1 C untoasted wheat germ
2 C assorted nuts (peanuts, walnuts, almonds, etc. I also include
sesame seeds, sunflower seeds, and unsalted split soybeans)
3/4 C corn oil
raisins
shredded coconut
In a large bowl mix the oats, powdered milk, wheat germ, and nuts.
Slowly pour the oil over all, mixing thoroughly.
Spread in a shallow roasting pan and bake approx. 1 hr. at 300 degrees.
Mix after 30 min. to evenly toast all the oats.
Add raisins and coconut after baking.
* This recipe may be easily altered to suit your taste. I always
change the variety of nuts depending on what's on hand. I add bran
because *it's good for you.* The original recipe called for
1/2 C of brown sugar but we don't like sweet granola and I think the
raisins and coconut are sufficient. Feel free to experiment!

| Now that you've made the granola, here's an easy granola snack that
makes a good lunchbox treat and is easy to pack and store.
Peanut Butter Granola Chews
3/4 C brown sugar
1/4 C corn syrup
2 T water
1/2 C peanut butter
2 1/2 C granola
Combine the corn syrup and sugar over low heat until simmering. Add
peanut butter and water. Add granola. Mix well and pat into a
buttered 9 inch square pan. Cut into squares before the bars harden.
I usually cover and refrigerate the pan, but you can also put
individual bars into sandwich bags. This is a big hit and disappears
quickly!

2 teaspoons ground cinnamon

1 cup raisins
10 tablespoons (1 1/4 sticks) unsalted butter, melted
1/2 cup honey
2 teaspoons vanilla extract
Preheat oven to 275. Mix first 4 ingredients in large bowl. Add dates
and raisins, stirring to separate. Mix butter, honey and vanilla in
small bowl. Pour over oatmeal mixture and toss 1 minutes. Spread
granola out on rimmed heavy large cookie shet. Bake until crisp and
golden brown, stirring occassionally, about 1 hour 15 mintues. Cool.
Store in airtight container.

| I'm finicky about shelf-life. You could probably keep it longer, but
the recipe did say that you could make it up to one week before. So, I
wouldn't eat it after a week.

Lots of people like it. It isn't a requirement of granola though. You
can omit it if you like.
