BROCCOLI STREUDEL

6 C raw chopped broccoli 
   (or 2 boxes frozen)

3 Tbs butter
3 eggs
1/2 tsp pepper
1 C chopped onion
1 C chopped mushrooms (more if you want)
1 1/2 C seasoned breadcrumbs
2 C grated cheddar cheese
juice 1 lemon
3/4 cup white wine

phyllo dough

Sautee onion in butter, add broccoli, sautee till tender but bright green.
Put in bowl, add rest of ingredients, mix.

You will need 4 leaves of phyllo for each log, makes two logs.

put 4 leaves in pile.  Lay 1/2 mixture across leaves (narrow width).
fold over first one down, then one up, etc.

repeat for other 4 leaves and other 1/2 of mix

brush top with butter, make diagonal slices in top

READ PHYLLO DOUGH DIRECTIONS CAREFULLY.  THIS STUFF IS DIFFICULT TO WORK WITH.

bake 350 X 30 minutes.
