Snow Oranges
Hi all,
I found this recipe in an issue of Gourmet Magazine, and tried it New
Years day on my guest, It was a big success. I varied it a little but it worked
out great.
Ingredients:
6 small navel oranges
1 quart vanilla ice cream ( should be softened)
7 tbls. Cointreau ( I used orange liqueur its cheaper )
sugar
first cut a small piece of the navel end of the orange so it makes a base for
the orange to sit on. Next cut the oranges in half, keep halves together
so that they can be put back together. Scoop out all the orange
and membrane from the halves leaving a shell, save enough of the orange to
make a half cup of orange juice. Brush 3 tbls. of the liqueur into
the insides of the shells, then put them into the freezer. Next mix the
ice cream, orange juice and the remainder of the liqueur together, add
more liqueur to taste if desired. Put the mixture into the freezer
until it becomes firm. When the ice cream is firm fill one half of a
frozen orange shell at a time with the ice cream mounding it. Put the
two orange halves together and wipe any excess ice cream from the sides.
Put the oranges back into the freezer and allow to harden. Just before serving
roll the oranges in sugar and garnish with a slice of orange or lemon leaves.
