863.0. "Low-cal or Simple Buffet Recipes" by WCSM::HOTT () Tue Dec 08 1987 16:21

I'm having about 30 people to a holiday party at my house and I'm
not used to preparing food for that number. I would like to set
up a buffet table with food that people can help themselves to
    whenever they feel like it.

I've been thru the directory and tracked down every note I could
find that had either party or buffet or appetizer suggestions that
I could find, which were only a few. I know there are more because
I've been reading this file for a long time but didn't think I would
    ever need them.

After that long-winded intro, my request is for recipes that are
suitable for this type of party or pointers to notes that I may
have missed. Especially appreciated will be recipes that are
simple to make. Anyone with low-cal recipes will have my undying
    gratitude.

    					Thanks,
    						Donna

I am attempting the same during the holidays, except I am having
only about twelve people. My menu with some help from the attendees
will be as follows: (not so much lo - call - but it is Christmassy

    Baked Lasagna
    Meatballs in sauce
baked virginia ham with honey glazed sauce
    Antipasta
    Rolls
    Herbed Spinach

Dessert - Centerpiece a homemade Gingerbread house
    Pecan Pies

    To start, champaigne punch

The beauty of this menu is that most can be made ahead. The lasagna
and meatballs were made and frozen last weekend. Lasagna gets better
with age in my opinion. The ham can be placed in the oven and
forgotten till you are ready to serve. Pecan Pies will be made
next weekend and frozen. They freeze beautifully as well. Take
them right out of the oven and place in freezer for about ten minutes.
Then cover with foil. If you are having family like I am, ask for
donations. My mother-in-law is bringing the antipasta. My
sisters-in-law, one is bringing hor d'oeuvres and the other a dessert.
Everything on holiday decorated paper plates, even red plastic knives
and forks. I guess the secret is to do as much as possible before
the day so you can sit back and enjoy. Hope that this helps.

The December WEIGHTWATCHERS (tm) magazine has a lot of xmas stuff
in it, including much in the way of low-cal party foods. Pick one
of them up - the recipes are usually good.
