date filling (see below)
1/2 c butter, softened
1/4 c shortening
1 c brown sugar, packed
1 3/4 c flour
(1 t salt)
1/2 t soda
1 1/2 c oatmeal (raw - use "quick-cooking" variety)
Prepare the filling and let it cool.
Heat oven to 400 oF.
Grease baking pan, 13x9x2 inches.
Cream butter, shortening, and sugar.
Mix in remaining ingredients.
Press half the mixture into the bottom of the pan.
Spread with filling.
Top with remaining crumb mixture.
Bake 25-30 minutes or until light brown.
While warm, cut into bars.
Makes 3 dozen.
DATE FILLING:
3 c cut-up pitted dates (1 lb. box)
1/4 c sugar
1 1/c c water
Mix together in a suacepan.
Cook over low heat, stirring constantly, about 10 minutes or until
thick.

| Date Nut Bars
Cream 1/4 lb marg, add 1/2 cup sugar, 1 egg yolk, 1 tsp. vanilla,
pinch of salt.
Add 1 cup pitted dates cut up.
Add 1 cup flour
Spread onto greased 8 inch square pan.
Beat egg white until stiff and spread over entire mixture.
Sprinkle 1 cup almonds or walnuts over all and brush with brown
sugar.
Bake 350 20 min.

| DATE CRUMB BARS
FILLING:
1 pound pitted dates
1 cup firmly packed brown sugar
2/3 cup water
1 teaspoon vanilla extract
CRUST:
1 1/2 cups old-fashioned oats
1 1/2 cup all purpose flour
1 cup firmly packed brown sugar
1/2 teaspoon bakiong soda
1 cup (2 sticks) chilled unsalted butter, cut into small pieces.
For filling: Combine all ingredients in medium saucepan. Bring to
simmer, stirring to dissolve sugar. Simmer 1 minute. Puree mixture
in procesor. Cool.
For Crust: Preheat oven to 350. Butter 9x12 inch baking pan. Mix
oats, flour, sugar and soda in medium bowl. Add butter and rub with
fingertips until mixture resembles coarse crumbs. Firmly press half of
crumb mixture into bottom of prepared pan.
Spread filling over crust. Sprinkle remaining crumb mixture over
filling. Bake until topping is golden brown, between 35-40 minutes.
Cool in pan. (Can be prepared 1 day ahead. Cover and stand at room
temperature.) Cut into squares.
