805.0. "Beef sticks" by HANEY::WIEGMANN () Tue Nov 10 1987 09:37

I saw a recipe the other day for beef sticks - supposedly makes
about 150 thin slices - good for holiday parties! You start with
ground beef and pickling salt, let sit in fridge a few days, form
into logs, and bake at low heat (200 degrees) for like 8-10 hours,
then slice thinly. Has anyone made these? Does it really work?
Are they worth the time? Sorry I just thought of this; I'll bring
in the exact recipe tomorrow to post.

    BEEF STICKS

    3 pounds lean ground beef
    1 TBSP mustard seeds
    1 TBSP garlic salt
    1 TBSP coarse black pepper
    1 tsp pickling salt

Combine all ingredients; cover with foil or plastic, refrigerate
1 or 2 days. Stir well once or twice each day. Shape into three
rolls, 7 inches by 2 & 1/2 inches. Place on rack in baking pan.
Place in cold oven - 200 degrees. Bake 12 hours, turning a quarter
turn every 3 hours. Let cool completely on wire rack. Wrap airtight
in foil or plastic wrap, refrigerate 2 hours, slice paper-thin,
    makes about 150 slices.
