Prepare ahead of time separately, 1 package each of lemon, lime, and strawberry jellos with 1 1/2 cups boiling water. Let them get firm, then cut into 1/2" cubes. Line a 9" X 13" pan with: 24 Graham crackers (rolled) (about 2 cups) 1/2 Cup Brown Sugar 1/2 Cup Melted Butter (Save 1/2 Cup for topping) Soak 1 envelope of gelatin (unflavored) in 1/4 cup cold water. Stir in 1 cup hot pineapple juice. Stir until dissolved and let cool, but nor set. Prepare 1 package Dream Whip, add 1 teaspoon vanilla. Fold in pineapple mixture and cubed jellos. Pour over Cracker mixture in pan. Sprinkle with crumbs on top. Place in the refrigerator until set....

RE .2 & .3 I use the small pkgs. of Jello. Also, instead of using unflavored gelatin, I make a small pkg. of lemon jello and let it partially set--then whip in Cool Whip (my preference) and then fold in the gelatin cubes. |
