692.0. "Breakfast menus." by LDP::BUSCH () Wed Aug 26 1987 18:46

After traveling in Europe on a few trips, I've come to realize how
boring the traditional American breakfast has become to me. Cold
cereal and milk, bacon and eggs, pancakes and sausage, etc. are
getting to be a real pain. How about a list of lively and hearty
breakfast ideas to relieve the monotony. For example, eggs florentine,
eggs benedict, Scandanavian smorrebrod (open sandwiches with all
sorts of goodies such as roast beef and lemon, anchovies and cheese,
etc.). How about keeping in mind ease of preparation on busy workdays
(use the microwave oven to prepare or reheat).

692.1Quick to Fix and Eat WantedISHTAR::MCFARLANDThu Aug 27 1987 17:1810
On the subject of breakfast, my kids are into things that can be
prepared and eaten quickly. At one time I saw a recipe for
a breakfast drink made in the blender with orange juice, yogurt
and some other things. I think it could have been one of those
kraft things in the TV guide (not sure). Does anyone have this
    recipe or other similar recipes?

Eggnog - milk, egg, 2 tablespoons sugar, vanilla. Whiz in a blender.
Use enough milk so it fits in your glass including other
             ingred.

Orange nog - Do primarily the same thing but adjust sugar/vanilla to
             taste.

My wife has concocted a recipe she uses in one of those sandwich grills
that makes 4 sealed trianglular sandwiches, and our toddler just loves it for
breakfast. She never makes the basic recipe alone -- always adds fruit.

Basic recipe:

1-1/2 cups Bisquick
3/4 cup milk
1 egg

Mix all ingredients together, and add whatever fruit you desire. Store in
refrigerator for up to 3 days. Pour into ungreased wells in grill and cook
for 4 to 4-1/2 minutes. Be sure lid is not latched shut, because the
batter will rise and lift up the lid 1/4 inch or so. To determine if
they're done, poke a toothpick into the middle of one, then press down on
the pancake to see if any batter oozes out. If not, they're done. Remove
from grill and dust with a little powdered sugar.

Variations:

1. Add 1 small can crushed pineapple, drained, and 2 ripe bananas, mashed.
Reduce milk to 1/2 cup. Or use the banana without the pineapple (but
don't reduce the milk). Or use the pineapple without the banana.

2. Add 1-1/2 cups no-sugar-added applesauce and about 1/4 tsp. cinnamon
(if the applesauce doesn't already have it).

3. Add lots of thawed frozen blueberries and (if desired) about 1
tablespoon of sugar.
