659.0. "Monte Cristo - New Twist" by HPSVAX::MANDALINCI () Wed Jul 22 1987 13:57

Try this one for a variation on a traditional recipe.

Monte Cristo for a large number of people, people who eat alot or
    brunches.

    Ingredients:
    white bread
    mayonaise
    mustard
    ham
    cheese slices
    eggs
    milk
    salt and pepper

    1. Cut bread into triangles. you can take the crusts off if you
want but it is not necessary.
    2. Spread a little mayo on one side of each slice of bread and mustard
on the other. Use it sparingly but don't be stingy. Do this to all
    of the bread before continuing.
    3. You are now ready to assemble. Using a square pan about 3 inches
deep, start placing rows on bread, triangular cut ham and tringular
cut cheese in the pan. The row should go bread, ham, cheese, bread,
ham, cheese, ending with bread on the row. The triangle points
should point upward. Continue this until you fill up the pan. It
usually takes 2 loaves of bread.
    4. Now mix about a dozen eggs and about 1 cup of milk together.
Add salt and pepper if desided.
    5. Pour the egg mixture evenly over the bread. Let sit overnight
or at least 4 hours tilting the pan to absorb the liquid.
    6. Now you are ready to bake it. There should be a little visible
liquid in the pan but it should not be brimming with the stuff.
    7. Bake at 350 degrees for about 1 hour. Let it sit for about 15
minutes before you dig into it.
    8. To serve, use a spatulla and slip it between the layers of bread
making sure that it person gets a complete "sandwich" of bread,
    ham and cheese.

This is wonderful recipe because it needs to be made to night before
and all you have to do is put it in the oven and serve, leaving
time for you to socialize. It covers some basics for the meal
because of the ham and eggs.

    Enjoy.

May not be the real thing, but I frequently make what my family calls
Monte Cristo sandwiches from leftover french toast, filled with sliced
ham, turkey and cheese, I often use cheddar, put it back on the grill
and heat until the cheese melts. The grandchildren think they are
great, and sometimes ask for them for breakfast.

Make sandwiches of Ham, turkey, cheese on white or wholewheat bread with no
crusts. Dip completed sandwiches into an egg batter like that which is used
for french toast. Deep fry in hot fat until browned and puffed up. Drain
well on paper towel. dust with powdered sugar. Eat.

		French toast batter

		5 eggs
		2 cup milk

Beat eggs with milk until well mixed.

P.S. Mix equal parts mayonaise and mustard for a dip for your monte
cristos.

    HORSESHOE MONTE CRISTO SANDWICH

    18 slices bread
    6 slices turkey
    6 slices ham
    12 slices Swiss cheese
    Mayonnaise
    Batter (recipe follows)
    Oil for deep frying
    Powdered sugar
    Strawberry preserves

For each of 6 sandwiches, use 3 slices bread, 1 slice turkey, 1 slice
ham and 2 slices cheese. Spread mayonnaise on 1 side of slice of
bread. Top with slice of turkey and cheese.

Add second slice of bread. Spread with mayonnaise. Layer with slice of
ham and cheese and top with third slice of bread, mayonnaise side down.
Press gently. Trim crust and cut in half diagonally, then into halves
again. Chill until ready to cook.

Dip sandwiches in batter. Heat oil to come 1/2 way up side of large
skillet. Add 1 to 2 sandwiches at time, depending on size of skillet,
and deep fry over medium heat until golden brown. Dust with powdered
