| There are bitter/sour orange trees grown as ornamentals in the
Southwest but I have never seen the fruit for sale. Do you
happen to know anyone who might send you some?

| There's a mail order outfit called William Sonoma (or Williams/Sonoma,
I'm not sure) that has canned seville oranges for people who are into
marmalade making. They have stores in Boston and San Francisco and the
usual 800 number. If you call one of the stores or directory assistance
for the 800number and call that, I'm sure you can get ordering info. (I
don't have a catalog around just now.)

| I just happen (believe it or not) to have a Williams Sonoma catalog
in my possession at this very moment! Their address is P.O. Box
7456, San Francisco, CA 94120-7456, and their number is
(415)-421-4242. I just recently heard a rumor that Williams Sonoma
has a retail store in Boston near Quincy Market (I think it's in
that new building between the market and the waterfront)

| OOPS!!
I just realized that in my previous reply (644.3) I mentioned that
Williams Sonoma had a retail store in the Boston area. Not realizing
that notes readers are from many different locations, Williams Sonoma
has retail stores in several cities across the U.S. Their operators
would gladly refer you to a location nearest you.

| To re-open an old note... :-)
I've looked through all the jam/jelly notes I can find and am
currently working on a search for an orange marmalade recipe.
Is there one in the file or does someone have one they'd be
kind enough to enter? :-)
None of the pectin boxes have a recipe for one and so far I
haven't found one I liked in any of my recipe books. (None of
them call for pectin and I want to make sure it jells thoroughly.)
I'm considering coming up with my own, but I'm just not sure of
the proportions. One of the ones I've found calls for only 4
oranges, 1 lemon and 6 cups of sugar (which sounds excessive to me.)

| for those serious about their marmalade:
Call Williams-Sonoma catalog of cooking goodies, headquartered in S.F.
cal. Ask them about their seville bitter oranges, etc. for REAL marmalade.
They have the right oranges and you will get the proper bitter/sweet/tart
taste of the best british brands. They also have a recipe using their
fruit. The fruit comes canned, sliced and prepared to cook. The result is
well worth the time, effort, and money.
PS. the six cups of sugar sounds quite right, actually...the orange peel
is NOT sweet and takes quite a bit of sugar to offset it.

| Here's the only recipe for orange marmalade I've been able to pull
out of any recipe books I have.

4 medium oranges 6 cups sugar
1 medium lemon 1/2 6-ounce bottle liquid
1/4 teaspoon soda fruit pectin
Remove fruit peels; scrape off excess white. Cut peels in
very fine shreds. Add 1 1/2 cups water and soda; bring to
boil; cover and cook slowly 10 minutes.
Remove white membrane on fruit; section fruit, working
over bowl to catch juice. Combine pulp, reserved juice and
peel; cover; cook slowly 20 minutes.
Measure 3 cups; add sugar. Bring to boil; cook 5 minutes.
Remove from heat; add fruit pectin. Skim and stir 5 minutes.
Pour into hot sterilized glasses; seal. Makes six 8-ounce
glasses.
