629.0. "Sicilian Meat Roll" by USAT02::CARLSON (Heavens to Mergatroid!) Thu Jun 11 1987 11:53
Sicilian Meat Roll (stuffed meatloaf)
2 beaten eggs 1/2 cup tomato juice
3/4 cup bread crumbs 2 Tbsp. parlsey
1/2 tsp. oregano 1/4 tsp. salt
1/4 tsp. pepper 1 clove Garlic minced
2 lb. ground beef 4 to 6 oz. boiled ham
1 6 oz. package mozzarella or american cheese
Combine eggs & tomato juice. Stir in bread crumbs, parsley,
oregano, salt, pepper and garlic. Add meat; mix. On wax paper
or foil, pat meat into a 10*8" rectangle. Put ham and cheese on
the meat and roll, securing ends with the meat alone.
Bake at 350 degrees for 1 hr. and 15 min.
I put small squares of the same cheese on top for the last few
minutes. Sliced cheese works much better than say, a loaf cheese
like Velveeta.

629.1 | What kind of pan? | CAMLOT::DUGDALE | | Thu Jun 11 1987 12:10 | 6 |
| Once you get the meat rolled up (I assume you peel the paper or
foil off as you go), what kind of pan does this go in? A loaf pan?
Thanks,
Susan

629.2 | "let me roll it!" | USAT02::CARLSON | Heavens to Mergatroid! | Fri Jun 12 1987 14:19 | 6 |
| I use a large rectangular baking dish. And rolling it up
with the wax paper or foil is a must!
(tried with Weight Watchers low sodium cheese & Light'n Lean
Ham - was still decent!)
