           Sicilian Meat Roll (stuffed meatloaf)
    
    2 beaten eggs              1/2 cup tomato juice
    3/4 cup bread crumbs       2 Tbsp. parlsey
    1/2 tsp. oregano           1/4 tsp. salt
    1/4 tsp. pepper            1 clove Garlic minced
    2 lb. ground beef          4 to 6 oz. boiled ham
    1  6 oz. package mozzarella or american cheese
    
    Combine eggs & tomato juice.  Stir in bread crumbs, parsley,
    oregano, salt, pepper and garlic.  Add meat; mix.  On wax paper
    or foil, pat meat into a 10*8" rectangle.  Put ham and cheese on
    the meat and roll, securing ends with the meat alone.
    Bake at 350 degrees for 1 hr. and 15 min.
                                                            
    
    I put small squares of the same cheese on top for the last few
    minutes.  Sliced cheese works much better than say, a loaf cheese
    like Velveeta.

    Once you get the meat rolled up (I assume you peel the paper or
    foil off as you go), what kind of pan does this go in?  A loaf pan?

    I use a large rectangular baking dish.  And rolling it up
    with the wax paper or foil is a must!
    (tried with Weight Watchers low sodium cheese & Light'n Lean
    Ham - was still decent!)
