561.0. "Soy fiber - available retail?" by SQM::AITEL (Helllllllp Mr. Wizard!) Thu May 07 1987 13:09

    I used to bake a lot of bread, but since I've been on my diet I've
    stopped and started eating Less bread. This contains some soy
    fiber which provides fiber but is not processed and so the bread
    is lower in calories than regular bread. However, the texture is
    still quite good (as opposed to other low-cal breads which are
    mainly air).

    My question is: is it possible to find this soy fiber on the market
    so that I can try baking bread with it? Wheat bran is not a good
    substitute since it DOES have calories. If anyone markets "Less
    flour" that would be great too.

561.1Better than LessTALLIS::SLEWISThu May 07 1987 13:417
    Sorry I can't help with soy fiber--

    But do try Bohemian Hearth Fiber bread. It too, is 40 calories/slice,
    but it far better tasting than Less bread. It has the hearty flavor
    I like in bread.

    Letus know if you come up with a recipe for low-cal bread!
561.2Try a soy dairyTLE::FAIMANNeil FaimanFri May 08 1987 10:549
    If you can find someplace that makes tofu... Tofu is made from
    soy milk, which is made by cooking and grinding soy beans with
    water to extract the nutritional parts. What is left over is
    almost pure soy fiber. (The name "okara" sticks in my mind,
    but it's been years since I've used it.) In Ann Arbor, the local
    soy dairy would put out big tubs of okara, and let you help your
    self.

    Is the Bohemian Hearth bread available in the Nashua area? I've
    got about 15 lbs to go, and I'm VERY VERY bored with the bread
    I'm eating now (though Less just came out with a Brown Bread
    version which is better than their wheat).

561.4try your local gourmetshop maybe?TALLIS::SLEWISFri May 08 1987 18:135
    I've found Bohemian Hearth at most Demoulas/Market Baskets (might
    be worth a trip down route 3) and also at Carlson's Orchard in
    Harvard, Ma. It's rare enough that I usually buy at least two loaves
    when I do find it. You won't get bored with this bread, and I've
    tried them all.
