585.0. "Veggie pie" by ROLL::IRONS (Help bring back head music!) Fri Apr 17 1987 09:06

I tried this last night because I wanted a change from eating meat
    all the time.

I got the Cheeseburger Pie recipe in note 494.7 and modified it.

    Here is the recipe:

1 bag of frozen vegetables (I used califlower, brocolie, and carrots
    mix)
1 cup shredded sharp cheddar cheese
    1/2 cup Bisquik
    1 cup milk
    2 eggs
1 teaspoon lemon pepper seasoning salt (more or less to taste)

Heat oven to 400 F. Lightly grease 9 inch pie plate. Spread frozen
veggies in pie plate (you may not use them all, I didn't). Sprinkle
cheese over veggies. Sprinkle on seasoning salt. Beat remaining
ingredients until smooth. Pour into pie plate. Bake until knife
inserted in middle comes out clean, about 40 minutes. Let stand
    5 minutes before cutting.

Unbaked Pie Crust - 2 crust (for 9" pie)
    2 cups chopped fresh Broccoli
    2 cups chopped fresh Cauliflower
1 cup frozen peas (I add a little more)
    1 cup chopped tomato
    1 cup sliced fresh mushrooms
2 cups white sauce (microwave recipe, below)
2 cups grated Monterey Jack Cheese

Mix all ingredients together, put into pie crust - adjust top crust,
pinch edges, and prick top with fork. Bake for 45 minutes to 1 hour
(I do it for one hour) at 350 degrees.

    WHITE SAUCE (Microwave)

1/2 cup butter, 1/2 cup flour, 1/2 teaspoon salt, 1/8 teaspoon pepper,
    and 2 cups milk

Heat butter on high for 1 minute. Add flour, salt & pepper to butter
and heat on high for 30 seconds. Add milk and heat on high for
    6 minutes.
