I've copied and enjoyed a number of recipes from this conference
so I thought I would share one of my favorites.
Spinach Fandango
1 lb Hamburger 1 clove garlic
1 chopped onion (medium) 1 can mushroom (small)
1 cup sour cream 1 can cream of celery soup
2 pkg frozen spinach (10 oz) 1 cup jack cheese
salt & pepper for taste parmesian cheese (optional)
Fry hamburger, onion, garlic, salt and pepper until brown.
Put in casserole dish and add spinach, mushrooms, soup,
sour cream and 1/2 cup cheese and mix well. Spinkle on the rest
of jack cheese and also parmesian cheese if desired.
Bake at 425 for 1/2 hour or until brown and bubbly.
If you're a real cheese lover like me, then add all the cheese you
want!! This stuff is great served with some nice warm rolls.
Yummm .... dinner time!

Here's an incredibly simple spinach dish which the guests always seem to
love. It's a great side dish for a turkey dinner. It's one of my
Mom's old standbys... I don't know where she got it, so I'll just
call it...
Mom's Spinach Dish
2 10 oz pkgs frozen spinach, thawed (reduced fresh would be fine)
1/2 pint sour cream
1/2 pint heavy or light cream or half-and-half
A bunch of sauteed onions or 4 Tbsp onion flakes
Seasonings like salt and pepper to taste
1/2 package stuffing
Mix everything in a small casserole dish except the stuffing. Sautee
the stuffing in some butter and put it on top of the spinach mixture.
Bake for about 1/2 hour at 350.
